BROCCOLI, CAULIFLOWER, AND CARROT BAKE

1 (10 oz.) pkg. frozen broccoli spears
1 (10 oz.) pkg. frozen cauliflower
1 (10 oz.) pkg. frozen carrots
2 tbsp. flour
2 tbsp. melted butter
1 (4 oz.) can mushroom stems and pieces
1 1/2 c. milk
1 c. diced processed American cheese
Salt and pepper to taste
1/4 c. butter
2 c. bread crumbs

Cook vegetables separately according to directions (do not overcook). Drain and cool. Add the flour to the 2 tablespoons butter, melted, and stir over low heat to make a smooth paste, being careful not to brown it. Drain the mushrooms. Mix the liquid with the milk and gradually add to the flour and butter mixture. Cook until it starts to thicken. Add the cheese, salt, and pepper. When cheese is melted, remove from heat and add mushrooms. Arrange the broccoli, carrots, and cauliflower in alternate rows in an oblong casserole dish. Pour the cheese sauce over top. Melt the 1/4 cup butter. Add the crumbs and stir until well buttered. Sprinkle over top of casserole. Heat in oven (350 degrees) for 20 minutes. Yields about 8 servings.

2 c. carrot strips (2 x 1/2 inch)
1 1/2 c. water
1/2 tsp. salt
1 lb. broccoli, cut in 2 inch pieces (3 c.)
1/3 c. butter
2 tsp. dry mustard
1 tsp. dill weed
1 tsp. instant chopped onion or 1 tbsp. chopped fresh onion
1/2 tsp. salt
1/4 tsp. ground pepper

In heavy 10 inch skillet combine carrots, water and salt. Bring to boil; cook covered over medium heat for 5 minutes. Add broccoli stalks and cook 5 minutes more. Add broccoli flowers and continue cooking until tender (5 to 8 minutes). Drain well. Add remaining ingredients, toss; heat through. Yield - 2 to 3 cups.

This exceptional dish is best with butter and fresh vegetables...dill and mustard seasoned broccoli spears and carrot sticks. 1 1/2 c. water 1/2 tsp. salt 1 lb. broccoli, cut in 2 inch pieces (3 c.) 1/3 c. Land O Lakes sweet cream butter 2 tsp. dry mustard 1 tsp. dill weed 1 tsp. instant chopped onion or 1 tbsp. chopped fresh onion 1/2 tsp. salt 1/4 tsp. pepper
In heavy 10 inch skillet, combine carrots, water, and salt. Bring to a boil; cook, covered, over medium heat for 5 minutes. Add broccoli stalks; continue cooking 5 minutes more. Add broccoli flowers; continue cooking until all vegetables are tender (5 to 8 minutes). Drain well. Add remaining ingredients; toss. Heat through. Serve.

Stir fry. This meal is actually how I got my son to love carrots, broccoli, and green,yellow, and red peppers. But you can use what ever you like. It is real easy to make and is my most favorite meal. Just cook up some cut up chicken breast until done, then throw in all the veggies you like and a tablespoon or two of oil. Fry that up for a few minutes add a Kinkoman Stir fry packet and a little water and 2 minutes later, throw it over rice. IT is so good. The kids will love it and not even know they are eating their veggies.

You could make a kieshe im not sure if i spelled it right but it usually has egg and cheese and you can add brocolli and carrots to it, also maybe you can make an oriental stir fry with brocoli and carots and cook it in soy sauce for him, possibly even put broccoli and carrots on a baking sheet and sprinkle a little salt and pepper on them and add a little olive oil and roast the vegetable in the oven they are very tasty, you can also try to make carrot and broccoli tempura which they make in japenese restaurants i mean it can be a little complicated but i do not know to what extent can cook, you can make carrot mini muffins in the little tin and pop those in the oven, and you can also go to the food network website and search broccoli and carrots and it should give you a list of recipes. enjoy cooking!

Put some olive oil in a pan along with some water. Just enough to fill the bottom of the pan, and maybe a quarter inch up the sides. Then add a dash of salt, and let the veggies cook. Put the broccoli in first, and add the carrots after a minute or so. Wait until the broccoli is bright green, and the carrots are cooked, but still crunchy. Remember that these veggies need steam to cook properly in this manner, so use a top on the pan when you're not adding veggies, or checking to make sure they're cooked. It's divine! This is my favorite way to cook veggies, and I can't think of a food I like better than broccoli! I also add celery, cauliflower, snap peas, and if I'm in the right mood, water chestnuts. Trust me, this dish is heaven! The thing I love about it is that it's so good, and so easy at the same time.

Lucky you (and lucky kid). Any stir fry would be great, especially if he likes other vegetables. You can use carrots in a root vegetable bake or a stew and serve steamed broccoli as a side dish.

For a snack, you can give him raw broccoli florets and baby carrots to dip into hummus, salsa, or any other dipping food he likes.
