FRIED SQUASH

1 cup squash, cooked and drained
1 egg
1 tablespoon sugar
1/2 teaspoon salt
1 dash pepper
2 tablespoons evaporated milk
1 tablespoon onion, chopped
1/2 cup cornmeal
1/2 cup self-rising flour
oil, for frying

Mash the cooked squash. Mix all together and form in small balls; drop into hot fat. Cook until brown.
Serving Size: 4

OR

GARLIC BAKED SQUASH

2 lbs winter squash
2 tablespoons flour
1 tablespoon oil
7-8 garlic cloves, chopped
2 tablespoons fresh parsley, chopped
Salt and pepper to taste

Preheat oven to 325F.
Wash and peel the squash and cut into bite sized pieces. You can use acorn, butternut, or hubbard squash or similar winter squash varieties.
Coat the squash cubes with flour that has been seasoned lightly with salt and pepper.
Grease a casserole dish with oil or vegetable spray.
Put the squash into the pan, and top with garlic and parsley.
Season with salt and pepper.
Bake for 60 to 80 minutes, or just until squash is tender.
Yield: 6 servings

OR

SQUASH CASSEROLE

2 to 3 cups yellow squash, bottle neck is best
1 can cream of mushroom with roasted garlic soup
2 cup shredded chedder cheese, extra sharp
salt and pepper to taste

Slice squash into coins, remove any seeds. Power boil in water and salt until just tender. Drain well
Place Squash in casserole dish, mix in soup, pepper and enough milk to thin to the consistency you like, not real runny though, top with cheddar cheese.

Bake in 350 oven until bubbly and cheese is well melted.

OR

BAKED ACORN SQUASH WITH APPLE STUFFING

1 med. acorn squash
2 sm. apples, unpeeled, diced
2 tbsp. diced celery
2 tsp. minced onion
2 tsp. butter, melted
2 tbsp. water
Dash of salt

Preheat oven to 400 degrees.
Cut squash in half. Remove seeds. Place cut side down on baking sheet sprayed with vegetable pan spray.
Combine apples, celery, and onion. Add butter and water. Put in small baking dish. Cover.
Bake squash and apple stuffing for 45 minutes or until tender. Remove from oven.
Salt squash. Fill with apple mixture.
Serves 2.

google squash lasagna, or look on allrecipes.com also just cooking some butternut or acorn squash with a little brown sugar is delicious.

i make this really good pizza with roasted butternut squash, tomato sauce, sage, toasted pumpkin seeds and olive oil. just cube the squash first and roast it. then arrange it on the crust with tomato sauce and other ingredients and bake.

halve unpeeled butternut squash, scoop out the seeds with a spoon. take some vegetables (onions, mushrooms, peppers, garlic...anything you like), chop them finely and fry them quickly with some olive oil with spices you like (make this mixture quite spicy as the squash is quite bland). grease the squash halves with a little bit of olive oil, season and fill with the vegetables. put in medium hot oven until the squash is tender. i like this recipe because you can be creative and it looks fantastic :)

Spaghetti Squash Pomodoro

1 large spaghetti squash
1 1/2 cups Roma tomatoes, diced
1/4 cup freshly chopped basil
2 T. freshly chopped Italian parsley
2 T. freshly chopped oregano
2 T. nutritional yeast flakes or soy parmesan cheese
1 1/2 T. olive oil
1 T. garlic, minced
1/2 t. salt
1/4 t. freshly ground black pepper
1/4 t. crushed red pepper flakes


Cut the spaghetti squash in half, remove the seeds, and discard them. Using a fork, rake the surface of each of the squash halves to separate the flesh into long strands that resemble spaghetti. Remove the strands of squash, leaving a 1/2-inch border around the inner edge of the squash halves to form a shell, and transfer the strands to a bowl. Add the remaining ingredients to the spaghetti squash and toss gently to combine. Place the squash shells in a large baking dish, cut-side up, and refill each squash half with the filling. Cover the baking dish with aluminum foil. Bake at 375 degrees for 30-40 minutes or until the vegetables are tender. Carefully transfer the spaghetti squash halves to a large platter for service.

Serves 4-6
