Vegetarian chicken noodle soup?!


Question: I am a vegetarian and I would like to make chicken noodle soup. What I am going to do is take chicken broth out of a can, and put all my vegetables, noodles, and spices. What I am using for chicken is cut up morning star chicken patties. There are no directions on the broth can and I am clueless when it comes to cooking. Help? Oh and the chicken broth that I am using has no meat in it so just to let you know that.

It's not vegetarian if it's chicken broth...use vegetable broth from a can. Just heat the broth.

How is chicken broth not made from chicken? It may have no meat in but it was probably made using chicken like meat gravy...If not I apologise, I know chicken and mushroom pot noodles are actually vegetarian, so you may be right. But I'd make sure it wasn't made using meat, look for the text saying it's suitable for veggies. If it ain't on there, then it's not vegetarian.

I think you're a little confused about chicken broth. Just because there is no meat in it, doesn't mean it is vegetarian. Take cheese, for example. Many cheeses are made with enzymes that are not vegetarian because the ingredients added come from a cow's stomach. Chicken stock isn't vegetarian because it's made from cooking the animal, regardless if there are chunks of chicken in it or not.

I live in Florida and shop at Publix and the Granary (a whole food store), and I buy Amy's Noodle Soup. It's in a can in the soup aisle. It's mock chicken soup (strictly vegetarian), with noodles and tofu to imitate the consistency of chicken. It's really good, especially on cold nights. Perhaps you can look it up to see where you can buy it in your area.

when you use chicken broth it is made from cooking chicken and if you use vegetable broth you can make a good soup with that .... just add sliced carrots and celery and some wide noodle 15 minutes after the veggies and simmer for 10 min more.... wallah! Vegan "mock chicken soup"

I am also a little confused by the question, as "chicken broth" does contain chicken and is therefore not vegetarian. However, perhaps you are using a simulated flavor chicken soup mix such as Imagine brand "No-Chicken" chicken soup, or a kosher "parve" chicken bouillon cube, which does not have chicken or any other meat product. Here is a recipe that sounds like what you would like to make.

"Chicken" Noodle Soup

* 2 to 3 Tbsp. olive oil
* 2 carrots, peeled and diced
* 2 carrots, peeled and diced
* 1 medium onion, finely diced
* 2 stalks celery, diced
* 2 bay leaves
* 6 cups boiling water mixed with faux-chicken bouillon powder, according to package directions (look for Osem and Telma brands, available in the Kosher section of your supermarket) As mentioned, you can also try the Imagine Brand of no chicken chicken broth, available in the organic section of your grocery store.
* Salt and pepper, to taste
* 1 lb. faux chicken, torn into bite-size chunks (try Worthington’s Chic-Ketts at Kelloggs.com or NoMeat.com)
* 2 Tbsp. fresh parsley, minced
* 1/2 lb. eggless flat noodles (try Mueller’s “dumpling” noodles)

Heat the oil in a large pot over medium heat.

Add the carrots, parsnip, onion, and celery and cook until soft, about 5 minutes.

Add the bay leaves, faux-chicken broth, salt, and pepper to the pot, raise the heat, and bring to a boil. Add the faux-chicken chunks, parsley, and noodles, return the soup to a boil, then reduce the heat and simmer for 10 minutes, until the noodles are tender.

Remove the bay leaves and serve.
