One would be take a large skillet and add 1-2 tablespoons of butter, add same amount of veggie oil. take chopped: onions; broccoli; peppers; and whatever kind of veggies you like. cook till tender but not falling apart. take out of pan and add 3 cups of water (or depends on how big the pan is) add instant rice (like, till the pan looks like its full). cook til tender. add cooked veggies and mix. enjoy

for some added flavor add a little bit of shredded cheese (your choice)

This is a great resource. For a big family, try the thanksgiving recipes. The "Three Sisters" Stew was a big hit this thanksgiving, for the vegetarians and omnivores alike when I made it. =)
