How beansprouts taste is going to depend on the beansprout.
Mung bean sprouts are very mild, kind of like a cross between water and green. Soy bean sprouts are strong. Lentil sprouts are spicy. Some people say that alfalfa sprouts taste like grass.
It all depends on what sprouts you are talking about.

They all taste different. Some are crunchy (mung bean), some are grassy tasting (alfalfa), some are spicy (broccoli & mustard)...

They taste watery, clean, fresh. Something between the taste of chickpeas and the taste of plain tofu - very mild and earthy. Some are a little peppery tasting, others are more mild. They all have a high water content and taste watery above all (it's very hard to describe). I eat bean sprouts all the time, especially mung bean sprouts, and I also eat alfalfa sprouts.

They are crunchy and have a mild grassy taste... they are good on sandwiches instead of lettuce.

Definitely earthy.

All of the above answers have great adjectives!

I would also add:
Crisp, refreshing & grassy.

Alfala sprouts taste like POOOISSSOOONN. (I'm allergic)

Bean sprouts are nice though, esecially in a stir-fry.

I agree with other answers, crisp, crunchy, earthy and sometimes grassy!
