On weekdays, I don't eat veggies for breakfast. I usually eat toast and panut butter or oatmeal, and a piece of fruit or fruit juice. On the weekends I make scrambled tofu and that usually has onions and sometimes carrots or bell peppers, and sometimes I add peppers to home fries when I make them. That's about it for veggies at breakfast for me.
The seeds you can easily snack on include sunflower seeds and pumpkin seeds. Others, like sesame and flax seeds are added to your foods. I grind flax seeds over my breakfast to add omega-3 to my diet. Sesame seeds can be sprinkled on Asian dishes or made into tahini.
Must haves include lots of fresh fruits and veggies, beans or other legumes and whole grain products. You need to eat a varied diet every day. As far as your fruits and veggies go, aim for a variety of colors every day. Add some strong protein sources like beans, lentils, tofu, faux meats, chickpeas and peanut butter. Get several servings of whole grains eat day, and add some nuts and seeds in the mix as well.
Yes, you need fats in your diet. They should be mostly plant fats which are primarily unsaturated (olive oil, flax oil, avocados) and less animal fats which are saturated and come along with cholesterol as well. Avoid transfats (anything listed as "partially hydrogenated" in the ingredients.)
You don't have to eat replacement meats, but there's nothing wrong with it. They are a more processed food and you should aim to have most of your diet come from whole foods, but they are convenient and tasty, so they di have a place. Tofu comes in soft, firm, extra firm and silken. The silken stuff is great for smoothies and creamy desserts. Firm and extra firm are good for grilling, stir frying and the like. Each recipe you want to try will tell you what type you want. Definitely start with recipes when you start cooking tofu - a lot of the "Eew, I HATE tofu" stories I hear start with someone buying a block of tofu and just winging it without (or eating it raw.) Press the water out of it before you start by layering it between paper towels or clean dish towels and adding some weight on top. If you press for up to an hour, it won't be mushy and it will absorb the flavors you cook it with.
There are tons of different kinds of beans. I love pinto beans, black beans, navy beans, chickpeas and lentils, but don't love kidney beans or lima beans. Try a lot of them and decide what you like. They are a great source of protein, iron and fiber and have little fat, so they are an important veg staple. You don't have to eat beans every day as long as you're getting protein from a variety of sources each day.

Wow! That's a lot of questions! The best thing to do is read as much as possible about nutrition and health. Most of your questions can be answered here:

and

A few remarks:
You don't need to eat veggies at every meal- I always eat fruit with my breakfast (apples or blueberries with walnuts and unsweetened oatmeal). Sprinkle on some sunflower or pumkin seeds also.
Every day you need to eat a VARIETY of foods to make sure you're getting all your protein and nutrients. I eat a lot of beans and whole grains, nuts (peanut butter on whole grain bread is great), avocados, olive oil on steamed veggies with tofu, etc.
Eliminate sugar and white flour as well- it's empty, junky calories. Good luck!
Welcome to the world of vegetarians and vegans. Did you know that there are different types of vegetarians? Pesca-vegetarians eat fish and Pollo-vegetarians eat chicken.
A link below will help to give you a good orientation.

How can you claim that you want to be a vegetarian and yet know practically nothing about it??At least read up on it more then come back. If you want to be a vegetarian, don't you think its better to know something about it at least before you even decide if you should or can be one? I know you are young and all but man, at least do some research on your own. anyway,i will try to anwer as best i can:
1) You can eat anything you want for breakfast. Vegetarian does not mean only vegetables. There are fruits, nuts and other stuff you can eat. For some, eggs and dairy are very acceptable. Fortified cereal with or without milk, with or without fruit are good examples of a vegetarian(and omni fo that matter)breakfast. So is a poached egg or a cheese sandwhich. or afruuits plate or whatever you like. Breakfast simply means food eaten in the morning and has no limitations as to what you can eat.
2) Nuts are seeds. So are flax seeds, pumpkin seeds sesame seed etc etc. For the most part, they are toasted. These are good examples of foods you should really read up on.
3) A list that includes nutritious and also hopefully delicious food is your only shopping list. Use your own taste preference. The only thing you can (or should) exclude from that list are all meat/meat products including fish and sea food. Again read up a bit on nutrition
4) A balanced meal that has all the nutritional requirements your body needs. This totally depends on your body type ,activities, personal taste, medical condition (if any) etc etc (Reading up on it making more sense?)
5) read answer 1
6) Yes but some foods like nuts and avocados will have enough of the oils you need. Olive oiland other vegetable oils in salad dressings for example is also a good source
7) No. You are already replacing nutrients supplied by meat with vegetable/plantfoods.NO NEED to replace the meat taste unless that's what you prefer.or it makes the transistion easier
8) Tofu is one source of protein but not the only source in a vegetarian diet. It is however convenient as it is also soldin "milk" form. For beginners,it is better to buy firm tofu asit is easier to handle. Stir fry with veggies or deep fry by itself. Try one kind first before you dive into the diverse but wonderful world of soybean curd.
9) I am not that fond ofbeans or seeds so I will leave this one to others
I think everything I wrote is fairly accurate. If I am wrong, I'm sure others will say so and correct me. I will appreciate that by the way.
Hope this helps. And please help yourself by reading up more.
Okay, Just enjoy your food. Eat plenty of fruit and veg
Avoid junk. Read more about vegetarianism on the internet.
Perhaps you could go step by step meanwhile you get informed about nutrition and all this issue.
If you eat any kind of meat, like fish or chicken, you are not vegetarian, however, you can leave meats one by one. First leave cow, then chicken and finally fish, and with fish leave all meats.
1- I live in Argentina, our breakfast is very different from your.
2- I eat almonds (just 6 per day is enough) , nuts, sunflower seeds.
Sometimes it is said that vegetarians can have low iron in their diet, it is not true, vegetables, seeds, grains, have iron.
But watch vitamin B12 information on internet. If you still eat dairy (milk and milk products) and eggs you will have B12 easily. There are at least a couple of veggie products that have B12 vitamin.
See at http://www.ivu.org/faq/index.html , very interesting information.

Okay, well I'm 15 be 16 this June and a vegetarian.
Anyways, I've been a vegetarian for about 8 years now, and it's not so bad.
I'll help you as far as I can with the questions.
1. Really, being a vegetarian you don't eat veggies and stuff all the time. LOL, being a vegetarian means not eating any meat or seafood or whatever, that has a face and so forth.
When you eat breakfast, eat a healthy cereal like cheerios, corn flakes, shredded wheat etc... or fix something healthy.
2. Seeds? uh, don't even go there.
3. Okay, meat substitutes, always in the healthfood isle in Krogers. Just ask for the vegetarian isle. There's products called morning star, boca, etc... Try them. Really good by the way.
4. Look in the vegetarian isle. That'll helf you.
5. Same as my answer for your question 1.
6. Okay, oils like lard and stuff no. But stuff like olive oil is very healthy, and is quite good.
7. Yes, that's meat substitutes. You don't have to if you don't want to become a vegetarian.
8. Mori nu Tofu is really good, also other tofus. Look for water packed tofu, it's good.
9. Okay, eat legumes. there very healthy.
Listen when becoming a vegetarian your giving up alot.
Being a meat eater is very cheap, but becoming a vegetarian is pretty expensive. But let me tell you, you'll live alot longer if your an vegetarian, than if you were a meat eater.
Your less prone to getting sick and diseases easier than if you ate meat.
Like the beef recall, and all that.
It will kill you in due time. So making this decision is pretty wise on your part.
But forget about the seeds, lol just eat healthy. read on it.
Eat salads, and rice, and beans (make sure no lard or meat is in them) tofu, vegetables, and all that good stuff.
You'll do good.
Have fun hun, and hope it works out for you.
