What do you vegetarians eat on thanksgiving? and on any other meat holiday?!
Answers: I used to know a vegetarian and never knew what this person ate. please tell me what they eat. i have heard of veggie burgers and thats about all. oh and salads. but is that really all they eat. i think becoming a vegetarian would be cool. but not if i can only eat certain things.
There are so many things to eat besides veggie burgers and salads. On holidays some vegetarian eat Tofurkey(I only eat this on holidays if I don't feel like cooking something big). My first holiday as a vegetarian I ate Tofurkey, since my recipes were few.
The past few holidays I have made dishes such as stuffed acorn squash, vegetable nut loaf, vegetable casserole, etc.
The list of vegetarian recipes is endless. A simple google search can show you tons of recipes.

Ok im a vegetarian and on Thanksgiving I eat lots of vegetable dishes my mom makes. I havent done this yet but they sell "turkeys" made out of tofu ,too.

My daughter is a pescetarian, so she eats fish. She does eat some fake turkey products, but not necessarilly tofurkey as she found some "turkey" that was even better that she could roast and slice up for sandwiches. But she wouldn't want that on the Thanksgiving table. Before she at fish, she had plenty with stuffing (always cooked a batch outside the bird), and all those fixings... she had plenty of delicious food to eat.
I eat what I normally would, only I make it at home and then take it to my family's place. Last Thanksgiving, I took Stuffed Bell Peppers and veggies with Spicy Peanut dipping sauce. For Christmas I took Potatoes, Peppers, and Onions with Veggie Chorizo in a spicy White Wine Sauce. I know that some people eat the same things every holiday, but I really like to switch it up.
Tofurkey! The greatest meat substitute ever invented. I used to only have it at Thanksgiving, but now we eat it at all our holiday meals.

I usually just do a very high end meal of somesort. I have no problem baking a portabello mushroom stuffed with herbed goat cheese, making a Ratatouille Penne Pasta, a Baked Beschamel Lasagna with Spinach and Mushrooms, or a Pumpkin Ravioli in a butter crisp sage alfredo sauce with a dusting of cinnamon.
Sure, you can make a tofurkey or whatever, but on so many holidays, it's all about the yummy sides.

Vegetarianism is really not limiting at all. We eat many of the same things meat eaters eat, just without the meat. Last night I made pumpkin baked ziti and salad, tonight we had a veggie-ful stir fry, tomorrow might I might make leek and bean cassoulet with biscuits baked on top, or chili or bean tacos or any number of other dishes. Many veg*ns start off using meat substitutes to make all the meals they're used to but once you explore the world of veg cooking, you'll find out that you can plan meals that don't have to have a big hunk of something meaty in the center of the plate. Pick up a couple of good cookbooks for inspiration (although you may not be contemplating going vegan, "Veganomicon" and "Vegan with a Vengeance" by Isa Chandra Moskowitz are fabulous.)
As for holidays, you can eat whatever you want. This year for Thanksgiving my boyfriend's mom made a turkey and I just made sure that all the side dishes (mashed potatoes and gravy, ginger roasted winter vegetables, garlic roasted brussels sprouts, stuffing, salad, rolls and desserts) were vegan. At Christmas, I made many of the same sides and made a homemade seitan roast in place of turkey.
