Green dinner!?!


Question: i need a recipe that includes green vegetables, normally i eat squash and broccoli but i need to get more green leafy vegetables and beens; cheese, milk, and eggs are also applicable. currently i have so cabbage and spinach in my fridge, as well as 1/3 lb portabela caps (sliced), eggs, milk chedder chesse(no rennet from animals), about half an onion, and cellery.

please no salads, im not a fan.

omelets for dinner aren't bad... just chop and stir-fry your cabbage and onion and portabela in a bit of olive oil, then set a side. crack open a few eggs and beat in a bowl with a bit of half and half ( the sweet flavor is good. mix in some red pepper like what you put on pizza if you like it spicy and some salt. fry this up for a little while until the bottom is browned. lift the sides of it with a fork to cook the rest of the egg and then flip. now pile on the veggies and the spinach (it'll cook in the omelet.) add in some cheese and set a pan lid on top the steam the spinach. after about two minutes uncover and fold in half. enjoy!

You could make a spinach and mushroom quiche.

if you want something different and really good... saute the onion and spinach with seasonings... fill the portebello caps with this mixture and top with the cheese. bake this at 350 for 30 mins and then under the broiler for 5 mins. for protein eat with a side of scrambled eggs.

make hard boiled eggs then get some cabbage and cook it add the beans, slice the hard boiled eggs into it and have the mushroom on the side
