Stop at the store and pick up a spaghetti squash. I cut it open and scoop out the seeds. Then I lay both halves in a container with about an inch of water and cover with saran wrap. I microwave for 12 minutes (medium size). Then you scoop out the 'spaghetti' and I put on a bit of margarine, garlic, pepper, and parmesan cheese. Quick and oh so good.

Trader Joes has a really yummy bean and rice burritto. You can make yourself a cheese quesdilla on the side, or maybe some meatless chilli. Yummy!!

Either:
Trader Joes sushi (or anyones sushi really)
TJ's vegan rice bowl (in the freezer section)

You can buy frozen organic eggplant lasagna

idk im not vegan but maybe like some noodles and alfredo

veggie lasagna, potatoes and cheese filled perigees. spinach ravioli's. instant rice with steam veggies from Birdseye. you can make soup if you can find veggie sock and than add rice. noddles. or potatoes and than veggies. buy some dinner rolls that you pop in oven with your meal or place garlic on top and you have a nice meal. also you can do a baked potato when you have time and place veggies on top . the word is pregreggios spleed wrong befors and i still think i spleed it wrong now i hope you know what i mean sorry

There are loads of options in the freezer department - try a veggie lasagna or pasta with red sauce - recently I had a yummy Tempeh dish from Trader Joe's. Salad is only one option there are so many foods that don't need meat for flavoring. You should peruse VegWeb.com for guidelines and yummy recipes. Good Luck!

I don't know about pre-prepared but I've got a minimal preparation dinner here if you wana try. Slice eggplant, tomato, onion & mushrooms. Grill em on your grill with olive oil, salt n pepper. Serve with what ever greens you have around and some leb bread or pita bread. Pretty easy n really tastey.

It's not prepared food but oh so good. Start with making hummus. It can be made in large batches and put onto a large baked potato, or used as a dip or thinned as a sauce for your veggies (cooked or raw) or tofu, or spread for breads. It's so versatile and yummy! All you need is a food processor, 1 extra large can chickpeas drained, garlic cloves, olive oil, salt, veggie broth, lemon or lime juice, and if you like spicy add a little chili pepper or cayenne. The juice, garlic and spice is really to taste so go "less" and add more till you get what you like. SUPER easy! Mix it up to your desired consistency and store in the fridge.

Thinly slice tofu and saute in a balsamic vinegar and oregano. If you don't have balsamic on hand you can use the lemon or lime juice again. Either way you'll get a nice zip to it. Get a nice whole wheat bread loaf or baguette and spread with hummus. Then fill with cooked tofu, fresh tomato, maybe a little fresh basil or cilantro, and lettuce. Before closing up your Mediterranean Sandwich, grate up some fresh Parmesan cheese and a little cracked pepper...... hmmmmm good! Bon Appetite :o)
