Try buying things in bulk. rice, beans etc are cheaper in bulk and keep for a long time. Am not saying sacks and sacks of the things, just enough to last longer than the usual produce that you normally buy. Also, less "popular" greens are cheaper even when organic. Finally, it seems impractical for you to rely on organic because of your financial situation. Be happy and content that you are being religious and true to your principles and hopefully, things will get better in the future.

try Indian. a lot of them are vegtarians. and they have a wide variety of veg recipes.

p.s. isnt cheese not allowed in vegan foods? so below is abit dumb lol. (either that or im wrong and dumb).

Pasta dishes (especially speghetti and "mac and cheese") are very cheap and filling! Also stirfrys because you can buy frozen stir fry veggies so you don't have to spend a bunch of money of fresh ones. Potatoes are cheap and there are so many ways to cook them, or put them in things such as potatoe salad and soups. I look for recipies online that yeild alot of servings, so one dish will feed me for a few days. Hope that helps!

pasta dishes or somosas!

You can buy sacks of beans and rice. They are cheap. Just keep eating the foods you buy. What's the problem? Think of all the nice animals you are saving. Make your own spaghetti sauce. It's cheaper, and why are you buying canned beans when you can buy them by the sack.

If you really want to save money, find a little plot of ground ... even in the cities some have "public plots" and raise your own food.

I started my vegitarian diet by just being cheap... go to www.doctoryourself.com and scroll down the left hand side to the "eat for 12$ a week" it's not a vegan diet... but all you would have to do is cut out the cheese and substitute more veggies... his calcualtions are based on 1995 prices, so I've found its more like 25-30 a week when I shop at trader joes... if you have a friend or family member who belongs to a co-op you should be able to get good priced on Dried beans, brown rice, olive oil, wheat flour... things like that bought in bulk can save alot of money. The cheapest veggies I've found are always cabbage, cucumbers, cellery, and green peppers. Produce in general is really expensive... in the summer time if you live close to a rural/farming area you can get really cheap veggies from local people.

Avoid the canned beans and buy bags of dried. Get green peas, garbanzos, pintos, lentils, black beans etc. They make a whole pot of food which will last you for days, and they only cost pennies! Then all you need is a spice rack, canned tomatoes (cheap) and onions and garlic. (also cheap.)

Pasta is cheap as well, but you're wasting your money on spaghetti sauce if you buy it pre-made. A can of diced tomatoes, a can of tomato sauce, spices- you've got more sauce for 1/4 the cost.

get some speghetti and boil it and then stir in the sauce

There are a lot of things you can do to pay less for organic foods. This article has a lot of detail: http://jinxyknowsbest.blogspot.com/2008/...
