My favourite is:

I use organic avocado as the spread (instead of butter or margarine)

I also use a fine film of quince paste spread on top of the avocado. This is an optional extra but it adds a “certain special something” to the overall taste.

Then add whatever fresh salad you want.

I normally have:

Lettuce
Tomato
Cucumber
Red Onion
Grated Beetroot
Grated Carrot

(If I could still eat dairy, I would also add cheese and mayo.)

Very yummy.

I also love (although can no longer eat) a traditional Ploughman’s lunch sandwich.

This is basically a crusty bread roll, spread with butter, then add sliced gourmet cheese (i.e. - an English aged cheddar) and pickles (i.e. - Branston pickles) you could also add lettuce etc....

Cheese, tomato & onion sandwich, made in a toastie maker, is simple but affective.

Lots of cream cheese, tomatos, lettuce, onion, sprouts, avocado, pepper, salt. ITS HEAVENLY!

Toast with romaine lettuce , tomato and faken bacon. I like to add mustard.

Tofurkey sandwiches, with or without cheese are my favorites.

Also try hummus wraps with hummus, avacado, lettuce, tomatoes, whatever your favorite vegetables are on a pita or tortilla.

Is it alright if it contains some peanut butter?
This is one of my personal favorites to bring to school.

On a soft tortilla shell spread some peanut butter. Top off with apple slices, add some cinnamon, and fold it to make a wrap.

Easy to make and super tasty.

or
a tofu sandwhich (my favorite of them all)
all you need is some sliced tofu (baked of course)
spinach (raw)
and hummus(place on sanwhich right before you eat it, so bread wont get soggy).
