These are all relatively easy meals to make up in the evening:

* Vegetable curry http://allrecipes.com/Recipe/Quick-and-E...
* Spaghetti veggienese (using quorn or soya mince)
* Spicy tofu stir-fry
* Risotto http://www.vegsoc.org/cordonvert/recipes...
* Veggie sausages, beans & mash.
* Nut roast http://www.vegsoc.org/cordonvert/recipes...
* Stir-fried vegetables & cous cous
* Veggie lasagne http://www.cooks.com/rec/doc/0,1725,1501...
* Jacket potato & baked beans
* Jacket potato & hummus with veg
* Lentil shepherd’s pie http://www.raspberryworld.com/recipes/le...
(much quicker to use tinned lentils)

Look them up on Amazon or something. Happy tasting!

Cook a spag bol with quorn instead of meat.

Garlic
Onion
Pepper
Mushroom
chop and fry.
Add quorn
Add Worcestershire sauce, salt, pepper and possibly paprika to taste.

Boil some spaghetti.

Voila!

well if ur friend is vegetarian but not vegan just get a pizza with no pepperoni or something.

Portabella mushroom spaghetti

Buy two large portabellas. Sautee them with a little bit of olive oil and garlic. Add some vegan marinara (I like to add two teaspoons of cane sugar). Simmer while you are making angle hair pasta. Pour sauce over noodles and serve with garlic bread made with vegan margarine.

Hi
you can find veggie recipes on this site and it is totaly free .

http://www.eatyourveggie.com

* Mushroom Burgers *
4 portabello mushrooms
lettuce
2 tomatoes
ketchup or mustard (your choice)
on a medium heat, cook the mushrooms for about
5 minutes. put them on a bun and add the sliced tomatoes and lettuce, add ketchup or mustard to taste.

If doing the spag bol suggested though, make sure the Worcester sauce is a vegetarian one - the usual Lea & Perrins one has anchovies in.

Add the mixed vegetables, curry leaves, salt and water. Cover and cook on low heat for 15 minutes or till the meat and vegetables are cooked..
