Two weird but healthy snacks that I love, and their quick to make are:
Mussily Cereal with Apple Juice
Mussily Cereal with plain Yogurt
Plain Yogurt with honey
Mini Pizzas (Bread, Ketchup, Oregano, Cheese put it in the microwave and their done!)

Couscous is very quick (less than 5 minutes) and filling.
Apples! Oranges, bananas, pears... you get the point hehe >__<
