Usually, tofu is best when eaten fresh the first time you open it. If you have to save it for later, it won't last for more than a 4 to 5 days.

A good way of preserving them (if it's white tender tofu) is make sure you put the left over uncooked tofu in water, and change that water everyday. Or, if it's those firmly packed tofu, you can put them in a sealed plastic bag to make sure it doesn't come directly into contact with air

Don't put your tofu into freezer, it will turn into a "sponge" and the texture gets really tough ( although the texture can be very interesting, it's actually a way of preparing tofu)

When your tofu starts to smell sour, or taste sour, that means it's already expired.

I'm not sure how long it will last but it lasts longer if you cover it with water when you store it in the fridge.

Yes, it can be frozen but the texture changes. I use defrosted tofu as a meat substitute.

Long enough to make someone sick.
