Answers: Hi there, I have a head of red cabbage and I'd like a recipe to use it up. Preferably raw or just steamed, and not as a soup. Is there any way to make like a salad roll/lettuce roll with it?

Red cabbage can be substituted in any recipe calling for white or savoy cabbage. The taste will be similar but there will be some color bleeding.
To make red cabbage rolls you remove a whole leaf from the head. Then w/ a sharp knife shave the thicker part of the main rib lengthwise to about 1/2 its original thickness. Put the leaf in a large pot of boiling water for about 30 seconds to 1 minute. The time will vary depending on the thickness of the leaf. You want to boil the leaf only until it is tender enough to roll around a filling of your choice. The reason for shaving the main rib is because by the time it is tender enough to roll the rest of the leaf will be a soggy, sloppy mess. You can pin the roll closed w/ toothpicks. If the filling is already cooked, or is intended to be eaten uncooked, you can then chill the rolls and serve cold. If your filling needs to be cooked you can cook ahead, then make the cabbage, or you can cook the filling in the roll. If the rolls are thicker than about 1 inch they're easier to heat/cook in the oven than on the stove top.
For the filling you can use jullienned carrot, beets, potato (white and sweet), parsnip, broccoli stems and cooking apples. You can also use cooked rice, small cooked pastas, small cooked peas or beans, chopped raw nuts, mushrooms, black olives. Cheeses are also good in cabbage rolls. Eggs are a nice addition too. Use chopped hard boiled eggs, minced scrambled eggs or the raw egg as a binder. As I'm not a vegetarian I usually add a meat of some sort so you will need to include a combination of protein source veggies to get your complete protein. There are dozens of recipes for vegetarian cabbage rolls available from Internet cooking sites - just "Google" it. Or you can just use your immagination and combine things that you like to eat.
I don't often make cabbage rolls, but when I have small amounts of fresh veggies and left over meats, I will sometimes make them rather than do a stir fry, casserole or soup. You can do the same sans meat and fish. I occaisonally make cabbage rolls (Usually white or green as the leafs are larger) as a main dish from things other than left overs.
The trick here is to learn how to shave the cabbage leaf main rib and parboil the leafs until just tender enough to roll. Have fun!
Chop it up so it's in thin vertical strips. Add olive oil and plenty of lemon. Salt to desired taste. Let sit so cabbage absorbs some of flavor and yum! Add chopped tomatoes or oil cured black olives for variety. So delicious.
chop it up like cole slaw, and mayo, finely chopped pickle and red onion and fennel if you like....very good salad.
I am a former chef and now a vegetarian and I like to make a braise with it, it has onions, apples, caraway seeds, red wine vinegar, salt and pepper, a natural cane extact for sweetness and a bit of apple juice for a stock componant.
I cook the onion in veg oil, then add the grated green apple seasonings and caraway seed, then the whole head of cabbage shredded or fine chopped, the apple juice and then let i braise for 1 1/2 hours, I then taste it add the cane extract and serve it as a side with a tofu cutlet and veggie german potato salad (not bacon, TVP).
I also would not recommend it in a soup, it turn blue,and not alot of people will eat blue soup, in a beet brosht it is fine. And the first recipe gets better everytime you reheat it, even good cold or room temp.
