Got any good vegan/vegetarian potato or pasta recipes?!

Question: I'm looking for some good potato and pasta recipes(rice too). Especially the ones you can just wrap in foil(potatoe ones) and put in the oven. Does anyone have any? Especially ones that I can make a whole meal of. Casserole type things I guess they would be called. Low calorie is helpful too! And that include normal type ingredients I can pick up at Walmart. Thanks!
