Easy vegetarian recipes please help?!


Question: My best friend is coming to stay with her family and I would love some easy vegetarian meal recipes if possible. Her husband isn't a vegetarian and prefers meat so I am challenged as I may need to make 2 different meal as thats what they do at home. To avoid me cooking 2 different meals does anyone have good ideas?

you shouldn't have to make 2 seperate meals for every meal, i'm surprised they do that at home...but hey, whatever. just think about all the meals that you eat that just happen to not have meat... there's got to be a few right?? definately make those! i'm sure even the meat eating husband has some meals he must eat that just don't have meat in them... then also think of what you eat with meat and find ways to sub in the "fake" /soy meats...

grilled cheese with tomato soup
minestrone soup
vegetable lasagna (*big hit even for meat eaters)
eggplant parmigiana
most italian pasta dishes (baked ziti, cheese raviolis, etc.)
vegetarian chili (make yourself or buy ready- basically diced tomatos, couple types of beans, chili seasoning, peppers, onions (or use a jar of salsa), and maybe corn, celery... and if you want morningstar soy ground meat)
veggie burgers with a side of sweet potato fries
gardenburger soy ribs with potatos and veggies (these ribs are really good)
morningstar soy hot dogs are my absolute favorite!!!
boca and morningtar both make great soy chicken patties/nuggets/tenders.... just serve them for the vegetarian in place of whatever meat your having with the usual sides
rice, beans, steamed vegetables
vegetable stir fry...

ok that's all that i'm thinking of at the moment, but i hope that sparked a few ideas.

You don't really have to make two different meals.just one big integrated one. Omnis think they have to make a big fuss everytime a vegetarian visits but really it's not all that hard. For example you can make a roast beef or pork for the non vegetarians and a vegetable terrine or casserole for all. And everyone appreciates a salad with a couple of choices for the dressing to start. Maybe a few canapes somewith meat,some without for cocktails. If the vegetarian eats dairy or eggs, that's even easier.

Sample meal I had that can be enjoyed by both: it's kinda"ethnic"but worked for me
They served an assortment of cold pickles and relishes with flat bread. Then chicken and lamb kabobs. Potato, green peas and eggplant curry (I think it also had string beans) served over rice or with more flat bread. Lots of spicy condiments that you can mp up with the breador with the rice. Dessert was coconut jelly (coconut milk cooked until thick with sugar added and tapioca starch used as cogaulant) with pandan water. Tea, fresh fruit juice or beer (which I chose) served as drinks

there are tons of HEALTHY vegetarian recipies. try www.vegweb.com they have alot of receipies ( also vegan) If i was you i would NOT cook 2 meals i would make the husband explore his vegetarian pallet since they are staying with you who knows he might like veing a vegetarian.
