Answers: My boyfriend is really sick and I know that he will want me to make dinner for him tonight but I can't think of any good vegetarian dishes that will be good on a sick throat ... any suggestions?
Tofu Noodle Soup
This yields about 4 quarts.
1T olive oil
3 large celery stalks, diced small
4-5 carrots, peeled and diced small
4-5 cloves garlic, minced
2t. minced or grated fresh ginger
1 yellow onion, small, diced
8c water
2 boullion cubes (or broth equiv)
1 to 1.5t dried dill (you must add this!)
1t. oregano (all seasonings are dry)
1t. basil
1/4 to 1/2t. paprika
1t sea salt
1t black pepper
1t tumeric
1/2t thyme
8oz thin noodles broken into 1.5" sticks
8oz firm tofu, pre-baked, pre-fried, or make your own like I do using firm tofu, pressed, heat up a bit of olive oil in a pan, place 1/2" thick squares on the pan and add all of the same spices you put in the soup plus optional breadcrumbs and heat until golden brown. Dice small.
Method: In a large stockpot (I use 6 quarts), heat olive oil and add carrots, celery, onion, garlic and ginger. Heat on medium and add 2T of water (I just grab a bit from the sink in my palm). Put a lid on and let it "sweat" for 10 minutes, stirring once or twice. Carefully take the lid off (the steam is quick and hot) and turn up the heat. Add the boullion or broth, water, and all the spices. Bring to a rapid simmer and then lower the heat and simmer for 15 minutes or until the veggies are soft. Take the lid off, increase the heat again but not as high, and add the noodles. Cook them 5-8 minutes, until al dente. As soon as you throw the noodles in is a good time to start sauteing the tofu. Heat the tofu in a bit of olive oil, and a pinch of each spice in the soup, plus 1T soy sauce (optional, but good) and mix and heat until crispy and brown. The noodles should be soft but not mushy now. Lower the heat even more, add the tofu. Stir, serve immediately. If you don't serve immediately, you can choose not to add the tofu right away. I like to put it in at the last minute and Ray likes it soaking, even overnight. It's up to you. There are many spices total, but they totally make the soup wonderful. I even use a lot more tumeric and ginger, as I said above, we were trying to kick the flu.

for the sore throat try tea with honey, lemon and good shot of whiskey - anyone can have that.

What about chicken broth, does he eat that? Any kind of chicken soup with rice is great when you are sick. Otherwise I suppose you could use vegetable soup instead.

I find with sore throats that you need something soothing how about carrot soup - its creamy and tasty and is restorative. A chilled soup is great for a saw throat and is healthy for you.
Cream of Carrot Soup
This recipe for Cream of Carrot Soup is about as simple as a recipe can get. Don't be misled though, the result is tasty and smooth, absolutely perfect with some crusty bread.
The first time we ever had Carrot Soup was in a cafe in Dublin and it was wonderful, the culinary highlight of the holiday. It took me a long time to realise that the flavour was just carrots with a minimum of herbs and other flavours.
To make 2 servings:

Around 250 kcal per serving
Boil the carrots in the vegetable stock until they are tender. Transfer to a food processor or blender and blend to a puree.
Make a basic white sauce with the milk butter and flour. Our favourite method is to mix some of the milk and all the flour in a jam-jar used like a cocktail shaker and add it to the butter and the rest of the milk warming in a large pan. Bring gently to the boil and keep stirring while the sauce thickens.
Add the pureed carrot to the sauce and stir in over a gentle heat. Serve immediately.
This Cream of Carrot Soup is one of favourites, quick and easy to make, and the general method can be used to make all kinds of creamy soups. We have tried all sorts of mixtures such as parsnip and orange, for example, but we have not yet bettered carrots.
Asparagus Leek Soup
A lovely, rich soup made with asparagus, leeks, and mushrooms and topped with a corn and bell pepper garnish.
Yield 4-6 servings

Ingredients one pound steamed asparagus, cut into 1?-in pieces
4 T butter
1? c corn kernels (preferably fresh)
1/3 c red bell pepper, minced
salt
6 oz cremini mushrooms, sliced
3 leeks, washed and prepared and sliced to 1/8-in
? t curry powder
2 c vegetable stock
2 c milk
4 t cornstarch
3 T cold water
white pepper
Directions While the asparagus is steaming, melt 1 T butter and sauté the corn and bell pepper for about 5 minutes, stirring occasionally, until tender. Add salt and set aside.
Melt 3 T butter in sauce pan over medium heat. Add mushrooms and leeks and cook about 5 minutes, stirring occasionally, until tender. Stir in curry for 30 seconds, then add stock, milk, and steamed asparagus. Increase heat, bring to a simmer, then reduce to medium again.
Whisk cornstarch and water in bowl then add to soup. Continue cooking the soup for 2 minutes, stirring constantly, until thickened. Season with salt and pepper.
Ladle the soup into bowls, top each with corn and bell pepper garnish, and serve.
Cucumber Soup
This chilled soup is delicious on a hot summer day.
Yield 4-6 servings

Ingredients 4 c cucumber, peeled, seeded, and grated
2 c water
2 c yogurt
? - 1 t salt
small clove garlic, minced
1 T fresh dill
1 T honey (optional)
fresh herbs for garnish (e.g., mint, chives), minced
Directions Mix everything but the garnish in a bowl. Chill for at least an hour, then serve topped with herbs
I'd make a simple vegetable soup for him. You can find good veggie broths at most natural food stores. www.vegweb.com has lots of recipes.
Or get Amy's Alphabet Soup. It's a rich tomatoey broth with a sprinkling of vegetables and alphabet noodles. I was feeling ill recently, so I heated up a can I had on hand, and I was feeling much better after I ate some. I know, it really isn't cooking for him, but he'll certainly appreciate you at least fixing something to make him better.
Hot tea or rooibos is good. I found an infusion called "Get Soothed" by The Republic of Tea that really does wonders for a scratchy throat. I use agave nectar instead of honey to sweeten it.
