Any ideas for a romantic vegetarian dinner?!

Answers: I want to cook my boyfriend a nice dinner but I am not really much of a cook - I want to learn. Does anyone have any suggestions and/or recipes of nice dinners? We are both in our mid-20's. I am a vegetarian but he's not... he does enjoy vegetarian dishes though. I am willing to cook with meat for him and substituting tofu or something for myself.

make an eggplant paremesian - dont have my recipie handy but there are several if you search for them on line
any meal you make for your boyfriend can be Romantic*
light some candles
set the table with flowers
put on some soft romantic music to set the tone
and enjoy your meal together*
for dessert........strawberries and whipcream* :)

It's really not that hard to do plus he won't miss the meat.
Start with a basil, mozzerella and tomato salad.
Have some cheese garlic beard of some kind.
A great entree salad would be great.
Put some slices steak on his and some tofu (I like mine fried) on yours. With a nice vinigrette.
Then maybe some coffee ice or fruit sorbet for dessert.
I'm not a vegetarian, but this is one of my favorite kind of meals.

You can make enough for dinner and save some food to the next day lunch. - saves time and money!

You could make your own pesto (yummy) with fresh basil and pine nuts. Pine nuts are aphrodisiacs! I mix pesto with pasta (I like angel hair) & any veggies of my choice.
Mix in processor or blender:
1 1/2 cups fresh basil
1/3 cup olive oil
1 cup pine nuts
3-5 cloves garlic
3/4 teaspoon salt
1/2 teaspoon black pepper
(optional) 1/3 cup nutritional yeast (for vegan) or Parmesan cheese
