Please, do you have a recipe for Mexican casserole w/out meat, (dairy products optional)?!


Question: 1(15ounce)can whole kernel corn, drained
1(15ounce)can black beans, rinsed & drained
1(8ounce)carton sour cream
1(8ounce)jar Pace Picante Sauce(I use medium hot)
2 cups shredded colby-monterey jack cheese
1(10ounce)can diced rotel tomatoes and green chilies
2 cups cooked rice
1/4 teaspoon black pepper
1-2 green onion, chopped
sliced black olives(for topping)
8 ounces shredded monterey jack cheese(for topping)

Combine the first 9 ingredients. Spoon into a lightly greased 9 x 11 inch baking dish. Sprinkle with the sliced black olives and shredded Monterey Jack Cheese. Bake at 350 degrees F. for about 50 minutes.

This one can easily be made with meatless chili and you can certainly leave the cheese out if you choose to.

DORITO CASSEROLE
Casserole Ingredients:

? 1 large 13-ounce package of Doritos (save 2 cups for casserole topping)

? 2 tbsp. onion, grated

? 1 10-ounce can of chili with beans

? 10- to 15-ounce enchilada sauce

? 8-ounce can tomato sauce

? 1? cups of shredded sharp cheddar cheese

Topping Ingredients:

? 2 cups Doritos

? 1/2 cup of shredded cheddar cheese

? 1? cups sour cream

Casserole Directions:

? Preheat oven to 375 degrees.

? Crumble 6 cups of Doritos with your hands into a large mixing bowl.

? Add the onion, the chili, the enchilada sauce, tomato sauce and 1? cups of cheddar cheese to the crumbled Doritos. Stir with a rubber spatula to combine. Place mixture into an 8? x 11-inch oven-proof casserole dish.

? Bake for 20 minutes.

? Remove from the oven. Spread the sour cream over the top of the casserole with a large spoon or rubber spatula. Top with remaining 2 cups Doritos. Then sprinkle with the 1/2 cup of the cheddar cheese.

? Bake for another five minutes and serve.

VEGETARIAN MEXICAN CASSEROLE

1 dozen corn tortillas (softened in hot oil)
3 lg. onions, diced
3 to 4 cans olives, chopped
2 lg. can chilies, diced
2 blocks Cheddar cheese, grated

SAUCE:

1 (16 oz.) sour cream
1 can cream of chicken soup
1 onion

In bowl, combine onions, olives and chilies. In deep pan, layer tortillas, above mixture and cheese, topping with sauce. Last layer should end with tortillas, sauce, then cheese. Bake at 350 degrees for 30 to 40 minutes or until bubbling. Let stand a few minutes before serving. Serve with refried beans and green salad.

How about black bean lasagna?

1 15oz can black beans, rinsed and drained
1 28oz can crushed tomatoes
3/4 c chopped onion
1/2 c chopped green pepper
1/2 c salsa
1 tsp chili powder
1/2 tsp cumin
1 c light ricotta
1/8 tsp garlic powder
10 uncooked lasagna noodles
1 1/2 c shredded cheddar and/or jack

Heat oven to 350. Spray a 9x13 baking dish with nonstick cooking spray. In a large bowl, mash bean slightly. Stir in tomatoes, onions, bell peppers, salsa, chili powder and cumin and mix well. In a small bowl, mix garlic powder into ricotta. Spread 1 c of the tomato mixture over the bottom of the dish. Top with half the noodles, overlapping slightly. Top with half the remaining tomato mixture, then all the ricotta, then half the cheese, then the remaining noodles, then the remaining tomato mixture, then the remaining cheese. Cover tightly with foil. Bake for 40-45 minutes, uncover and let stand 15 minutes.

I make a sort of spanish/mexican rice without meat.

Prepare rice, however much you'll need to feed yourself/family. (brown OR white)

Add about half a can of black bean and a half can of dark red kidney beans DRAINED. You can add more or less depending on how much you like them, but they are a great source of protein.

Add about a 1/2 large jar of your favorite salsa, however much you need to fully coat all of the rice, so it's not dry.

Add a few table spoons of hot sauce ( I prefer Frank's) , once again more or less, depending on how hot you like your food.

Add about 3 table spoons of balsamic vinegar and about the same or worchestirshire sauce.

Once all of this is mixed in the same pot/pan, turn the heat up to about med-low and add your favorite cheese, I just use packaged shredded mexican cheese.

This is really easy to make, and doesn't take as long as it may sound, I just wanted to give you a thorough explanation. This is filling/satisfying, and it's a healthy dish too. TASTY! Plus, you can always modify it adding or subtracting anything you may like :example--morningstar crumbles, from the frozen section, it's in a green bag.
