I stopped eating meat 2 months ago and am running out of ideas for quick and easy meals after work. help pls??!
Amy's Indian food or Trader Joe's Indian Food (Dal) with rice.

Stir-fry veggies and rice with Tofu - I use extra firm, wrap in paper towels to soak up the excess water. Cut in slices, fry in a little olive oil, hot pepper sesame oil and soy sauce. Sprinkle with ginger, garlic, curry, whatever you have in the cupboard. Top with sesame seeds. You can also top it with sliced veggie cheese and serve on toasted sourdough with mustard.
Gardenburger Riblets, baked potato, brocolli (w/ lemon, margarine and garlic) and a salad.
Pasta w/ marinara sauce, if you have Boca Itailan Sausages (vegetarian) cut them up and add it to the sauce. Serve with garlic bread - spread butter on bread, sprinkle with garlic powder and brown in a pan, butter side down.
Boca Sausages or even MorningStar Farms Sausages (not the breakfast ones) are good on homemade pizza - add mushrooms, tomatoes, broccoli, peppers, onions.
Easy Corn Chowder Soup – 1 can each of White Corn, Yellow Corn and Creamed Corn, including the water from the can. Cut up celery add to the pot, add a little rice dream milk.
To vegetarian refried beans add mild green sauce. Add cheese if desired. Make Spanish Rice – Far East and/or Rice-a-Roni makes it in a box, just add tomatoes. Serve in a burrito, taco or tostada – add lettuce, tomatoes, soy cheese and avacado to the top.
Quorn turkey roast - use leftovers in soup -
Vegetarian Chicken Noodle Soup
6 cups of pure water
? cup Vegetarian Chicken Soup Base
6 organic celery stalks, chopped
1 ? cups sweet onion
6 carrots, chopped finely
1 package organic noodles (rice, corn or barley)
1 package of Quorn Tenders (or use leftover Quorn Turkey Roast cut up)
Sauté Tenders lightly in olive oil. Heat water, add soup base, stirring gently. Add vegetables, noodles (consider breaking them into 1-2 inch pieces) and Quorn Tenders.
Answers: Amy's Soy Mac-n-cheese, add Soy Knox or Smart Dogs.

This may be lame to you, but I do it a lot. Amy's and Cedar Lane make a bunch of good vegetarian TV dinners. Mataar Paneer is my favorite (Indian food). Theres some corn and black bean enchiladas that are okay. Some brand called Tchnick or something makes a pretty mean potato soup.

I have been a vegeterian for 7 years and it has been hard for my mom to make me things but soy meat really work like the chicken nuggets it depends how you make them but it takes like 10-15 minutes or less in the microwave. People say the chicken nuggets are good and the burgers, chicken patties, and ground beef. Once you sort of forget the taste of meat it is easier to eat the other types because they are good and you aren't comparing them to real meat! good luck and thank you =]
O and if you don't want to try soy meat there are many like mac and cheese, spagetti, stuffed shells, alfredo noodles, and these garlic noodles in packs for one and you just and water to some and heat them up they take like 7 minutes I would just go to the grocery store and look for them some are in the frozen foods section and others are on isles but again good luck and I hope things get easier and don't forget to take vitamins with iron in them.

There's also a cookbook put out by Vegetarian Resource Group called "Conveniently Vegan" by Debra Wasserman. However, I have to say I do NOT recommend using packaged seitan, as it's way overpriced and really rubbery. Make your own.

You can buy frozen veggie mixes, a cake of tempeh (or veggie strips), and some stir-fry sauce and make a stir-fry. It takes a lot less effort than cutting up your vegetables.
Many pre-made pizza crusts are vegan. You can get vegan pasta sauce, load up some veggies on it, some cheese if you aren't vegan, and make a pizza. I enjoy a cheeseless pizza every once in a while.
There's a website called the Vegetarian Loaf Studio, where you plug in the ingredients to make your own veggie loaf. There are vegetarian gravy mixes out there (although you can also make your own while the loaf is cooking) to go with it. Nuke a potato, heat up some veggies, and you have a meal.
There are some things you should do on the weekend and either freeze or refrigerate so you just have to take the food, heat it up, and eat.
I'm not sure where you live but there is an awesome line of both Indian and Thai pre-packaged food called Tasty Bite in some grocery stores. If not there, try a health food store. You can also google this line and find it on the web or Amazon to buy online. The Tasty Bite line carry both vegan and vegetarian options. You can cut the package open, pour it in a bowl and microwave it and cook some 15 minute quinoa to add to the side. Also add some sliced tomatoes with spinach and you've got yourself a quick, healthy, tasty meal!
