Here are some recipes I've actually tried and liked.

Vegan Ricotta Cheese

Vegan Cottage Cheese 1 (this one is OK)

Vegan Cheese Sauce

(this one is similar to ones I make for casseroles and macaroni, but not exactly the same)

This is a recipe I found to make a vegan cheese that I have NOT tried but it looks interesting, I just printed it out and I will give it a try:

Good luck! Also, remember, you can buy it at stores, though I haven't had much luck. Tofutti's Cream Cheese (Vegan) is really wonderful and would reccomend it, and Follow Your Heart products melt well and are pretty passable. Otherwise, just keep looking, you can find them at Whole Foods, some Trader Joe's, and increasingly at health food stores and even mainstream chain stores. If your store doesn't carry it, always ask. The power of customer suggestion is tremendous.

If you "need" to make food for her, there are much simpler things to eat than trying to make soy cheese out of tofu.

She can BUY soy cheese, but she's not going to be making soy singles anytime soon. Especially out of tofu.
