I don't remember the recipes, but there is this awesome book you can borrow from the library called "Vegan Cupcakes Will Take Over the World." As a matter of fact, if you go to you local library's website and search "vegan cupcakes," tons of books will probably show up. By the way, the book I mentioned ("Vegan Cupcakes Will Take Over the World") can probably be found on Amazon.com, too. The recipes are very healthy, I would think.

Be careful, though, some bleached sugars or flours are made with animal bone-char. It would probably be best to buy organic/vegan sugar and flour.

Not to try and burst your bubble, but it's unlikely you're going to get a recipe for regular sized cupcakes that are 60 calories or less each.

It takes, for most recipes I have at hand, 2.5 cups of wheat flour to make 18 regular sized cupcakes.
White flour = 455 cals/cup x 2.5 cups = 1138 cals/18 cupcakes = 63 calories per cupcake
If you change it to whole wheat flour, it's still 57 cals per cupcake. Since the difference between a cupcake and a muffin is usually icing - I can't imagine how you'd keep it under 60 calories each.

This is the lowest cal cupcake recipe I know:
2 cups whole wheat pastry flour
1 tablespoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 tablespoon cinnamon
1/4 teaspoon nutmeg
1/2 teaspoon ginger, powdered
1/2 teaspoon black pepper
1 teaspoon maple or butterscotch extract
1 and 1/2 cups Splenda
1 cup applesauce (unsweetened)
2 tbsp flax mixed with 6 tbsp cold water + 2 tbsp silken tofu OR enough ener-g egg replacer to replace 4 eggs
15 oz can pumpkin puree (small can)

Preheat oven to 350. Blend the dry ingredients and the spices. Separately, blend the wet ingredients. Fill 18 cupcake papers and spray them with a nonstick spray. Add the wets to the dry ingredients, taking care not to overmix. Ladle into the papers and bake 20 minutes.

Frost with white icing, cream cheese style.

Total=1300 calories
18 cupcakes=72 calories (before frosting)
BUT it has lots of fibre, and it takes 7 calories to digest every gram of fibre - there's around 36 grams of fibre in this recipe, so that's about 2 grams per muffin.

Banana walnut & almond cinnamon cake

Ingredients:
2 ? Cups self raising flour
? Cup vegetable oil
? Cup soft tofu
1 ? Cup soy milk (300ml)
? Cup brown sugar
3 or 4 ripe bananas
? tsp salt
? tsp vanilla
1 tsp cinnamon
? Cup crushed walnuts
? Cup crushed almonds

Method:

1. mash up bananas & tofu
2. add soy milk, oil, vanilla, salt, sugar, cinnamon & nuts then whisk together
3. sift flour in while mixing
4. grease baking pan with margarine (I use canola or soy margarine)
5. fill tray and bake for about 1hr at 180 degrees Celsius. Or in muffin try. (time & temp may vary depending on your oven)

I'm not sure how many calories are in it, but you can use artificial sweetener if you want, or reduce the amount of sugar, since bananas are already quite sweet. Its still quite healthy fruits, nuts that sort of thing. And no chocolate or frosting.

I love this recipe its my very favorite.
