There are so many good books around that is a hard question. I have one of the oldest by Anne Wigmore which goes into nutrition, transition, food-combining, as well as lots of recipes and instructions for sprouting. It is called "Recipes for Longer Life". It is a lovely book as it is quite old fashioned. Many recipes including pizza, pate, soups, appetizers etc.
Anne Wigmore was one of the first raw foodies and founder of the Hippocrates Health Institute. And I think of her as the wheatgrass lady.
There is an Amazon raw food bookshop and lots of useful links (including to youtube chef videos) set up at:

You may find it easier to read the more modern books, which have colour photos. Ani Phyo is someone that has brought out a book, "Ani's raw food kitchen", won best vegetarian cookbook 2007 . Ani was raised on raw food, went off it but has now gone back to it. She has some clips on youtube where she shows you how to make some fantastic recipes - very simple and yummy, also a web site...

You also may like to check out Shazzie, including her journey into going raw:

She has books: Detox Delights, Detox Your World and Naked Chocolate (with David Wolfe)
David Wolfe is also very popular in the raw food world he wrote: Sunfood Diet Success System - 6th Edition, The - about going an maintaining a raw diet (anywhere from 80-100%)
Ex-supermodel Carol Alt has written Eating in the Raw, but beware she eats meat and fish and (may not be 100% raw). Apparently the book is quite interesting as it talks about her health problems and how raw food improves health etc.
Yes, so you need good books, but also check out all the stuff on the web and youtube (heaps more on youtube by lots of people on going raw and recipes)

How to live off of carrots and nothing but carrots.
I just recently came across the book, The Raw Food Detox Diet by Natalia Rose. I haven't read any others, but hers has lots of reasoning behind eating raw along with recipes, especially for those starting out. There's different levels that you can be according to your current diet and then you can work your way up to being truly raw.
I want to do it, but it is very time consuming. I aspire to be raw one day though.
