Experienced vegans: Are there any creamy-fluffy tofu scramble recipes?!
Before, scrambled eggs were my favorite type of breakfast. Now I discovered some recipes for tofu scramble, but they all feature completely dry and crumbly ingredients, the major role plays crumbled hard tofu. This does not sound similar, and so far, after trying one of those, I was really disappointed, not by the taste, which was nicely similar to eggs, but this dry and crumbly texture will keep me from trying this type again.
Are there any recipes known for a half creamy, half fluffy tofu scramble? (This is the texture I was expecting from this dish and the reason why I always loved scrambled eggs in the first place)
I would really appreciate to be able to find a replacement, this could also help to convince my hunny not to think anymore, that I eat "gross foods for health reasons". He is not laughing about me, but he does pity me.

This is the scrambled tofu recipe that I love!!
INGREDIENTS
16-ounce block firm tofu
3 cloves garlic, peeled and sliced thin (about 1 1/2 tablespoons)
3 tablespoons diced red bell pepper
2 tablespoons olive oil
1/2 teaspoon turmeric
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
3/4 cup sliced green onions, scallions, chives or 1/2 cup minced onion
2 teaspoons soy sauce
Fresh salsa
Corn tortillas
Drain the tofu and crumble it, using clean hands. Sauté the garlic and diced pepper with the olive oil in a medium sauté pan on medium heat, for about 2 minutes. Stir in the crumbled tofu first, then add turmeric, salt, pepper, green onions (scallions, chives or onions) and soy sauce. Cook the tofu for 3 more minutes, stirring occasionally. Serve with salsa and warm corn tortillas.

it's all vegan recipes, however I'm sure you could add some "cream" or "buttermilk" (soy milk with a little lemon juice in it) to any of these and have that creamy texture you're looking for. good luck, and good job.. :o)
and you know what.. good for you for taking your own health into your hands. You are a very Strong woman.. i don't know what i would do if i ever was diagnosed with lupus. It's woman like you that give woman like me the Strenght to know as woman we can overcome anything... :o)
This is the best tofu scramble recipe that I've tried. It's great because there is a "cheez" sauce that totally ups the creaminess factor! My non-vegan boyfriend even devours it!
Cheez sauce:
1/2 cup flour
1/2 cup nutritional yeast
1 teaspoon garlic powder
2 cups water
1 teaspoon yellow mustard
4 tablespoons or less of vegan margarine
Stir fry:
1/2 onion
1/2 green pepper
1 tub drained and crumbled extra firm tofu (not silken style)
cooking oil
turmeric (optional)
salt and pepper to taste
Directions:
Make Cheez Sauce:
Mix first 3 ingredients together in sauce pan. Add H2O and mix thoroughly. Heat on Med until thick and bubbly. Remove from heat and add mustard and margarine (I like Earth Balance). Set aside. *I got the recipe for this sauce from this site (cheesy enchiladas)*
Stir Fry:
Saute up some onion, and green pepper in oil. When they are good and soft, move them to the sides of the pan and form an empty circle in the middle for your tofu. Add more oil to the middle of the pan, then add your drained, crumbled tofu (don't use silken, use extra firm). When it starts to get golden, mix in the peppers and onion and keep frying. You can add some turmeric for color if you like.
When it looks like you could eat it, add the nut. yeast sauce and mix it all in to coat until that becomes golden brown too. I saute this for another couple of minutes. You might not need all of the sauce. I save the leftovers for pizza or nachos.
Add salt and pepper to taste (this makes all the difference!)
Eat! This is SOOOOO good and it’s great on toast or English muffins (I use Matthew's brand). I don't miss eggs at all after discovering this!
