2 (15 ounce) cans crushed tomatoes
2 teaspoons salt
1/2 teaspoon ground black pepper
2 teaspoons ground cumin
6 tablespoons chili powder
2 tablespoons dried oregano
2 tablespoons distilled white vinegar
1 tablespoon liquid hot pepper sauce, such as Tabasco?

DIRECTIONS
Heat the olive oil in a large skillet over medium-high heat. Add the onions; cook and stir until they start to become soft. Add the green peppers, red peppers, garlic and tofu; cook and stir until vegetables are lightly browned and tender, the whole process should take about 10 minutes.
Pour the black beans into the slow cooker and set to Low. Stir in the sauteed vegetables and tomatoes. Season with salt, pepper, cumin, chili powder, oregano, vinegar and hot pepper sauce. Stir gently and cover. Cook on Low for 6 to 8 hours.
make a pizza with just cheese or veggies, or you could make bean burritoes, cheese enchiladas, a stir fry with veggies...you really have a lot of options

Blackened Cajun Tofu:
1 lb. extra-firm tofu, drained, pressed, and sliced into four thin slices, then each piece sliced from left top corner to bottom right corner forming 8 long triangles
2 TBSP nutritional yeast
1/4 tsp salt
1/4 tsp pepper
1/2 tsp chili powder
1/2 tsp cayenne pepper
2 TBSP olive oil
Mix yeast, salt, pepper, chili powder, and cayenne pepper on a plate, set aside.
Preheat a pan over medium-high heat, add 1 TBSP oil and let heat for about 30 seconds to 1 minute. Take a slice of cut tofu and dredge in yeast-pepper mixture. Place 4 dredged tofu triangles in pan and brown on both sides, approximately 3-5 minutes on each side. Take blackened tofu off of pan and lay on paper towels to absorb excess oil. Add last 1 TBSP oil to pan and heat for 30 seconds-1 minute. Dredge the other 4 tofu triangles in yeast-pepper mixture and add to pan. Brown both sides and place on paper towels when done.
Simple Waldorf Salad (I know the ingredients seem odd but trust me, it's awesome):
1-1/2 apples, cubed
1 TBSP lemon juice
2 medium stalks celery, sliced in 1/4" pieces
1 cup red seedless grapes, each grape sliced in half
1/2 cup vegan mayonnaise
1/2 cup walnuts, chopped.
Chop apples and place in large mixing bowl, sprinkle with lemon juice. Add celery, grapes, walnuts, and mayo. Stir until well combined and chill in refrigerator for an hour or so.
It sounds weird but it's really good.
Stuffed Mushrooms
Ingredients
* 5-6 cherry tomatoes, cut in small pieces
* 8-9 large mushrooms
* 2 tbps chopped green peppers
* 1 garlic clove, minced
* 2 tbps extra virgin olive oil
* salt n pepper as per taste
* 1 boiled and smashed potato
* 2 tbps breadcrumbs
* 5-6 tbps mozzarella, grated
Cooking Instructions
Clean mushrooms with a soft brush or wipe with a piece of cloth. Don't wash them as they will retain water. Discard the stalks.
Mix all the ingredient (except breadcrumbs and mozella cheese) and fill in the mushrooms equally with a teaspoon.
Then mix the breadcrumb and the mozella cheese together and cover the mushrooms with it. Now place them in a greased dish suitable for the oven.
Preheat the oven to 175 C (350 F) and bake for about 15 minutes until the top is golden brown. Then Serve!!
Carrot and Chick Pea Soup
2lbs Carrots (Peeled and cut into small chunks)
10 Cups Water
1 Vegetable Stock Cube
1 Large Onion (Cut into small chunks)
1 Can Chick Peas (Washed and Drained)
1/4 Tsp Cinnamon
Dash or Two Mild Curry Powder
Dash or Two Ground Corriander
Salt and Pepper to Taste
In a medium to large pot, boil the carrots, onion and stock cube in the water until the carrots are soft. Once the carrots are soft, turn off the heat and blend everything in the pot. Add the chick peas and blend into the soup. Add the rest of the ingredients and stir well. Add more spices if needed.
If the soup needs to be thickened, in a separate bowl, whisk together 1tbsp melted vegan margarine and 1tbsp flour. Slowly add 1/4 cup soy milk and whisk out any lumps. Stir this creamy mixture into the soup.
A salad or ummmmmmmmmmmmmmm............ Oh yeah nachos.
