Veg. Problem?!
Answers: I have just become a veg. about a week and a half ago, and I just started to wonder what I can eat for Easter? I asked my cousin to make something on the side for me, but she said no. So, the question is, Vegetarians, what do you eat at Easter???
Vegetable Pot Pie
(Serves 8)
CRUST: This is a quick crust that can be used in many different recipes. (In a rush use a store-bought pie crust.)
2 cups whole wheat pastry flour or unbleached white flour (note: use pastry flour, not regular whole wheat flour)
1/2 teaspoon salt
1/2 cup vegan margarine
1/2 cup water
Mix flour and salt in a bowl. Work in margarine with fingers. Add water, stirring as little as possible to form a ball. Divide into 2 equal balls and roll out to 1/8-inch thickness. Prick pie shells and bake in pie pans at 400 degrees for 10 minutes.
VEGETABLE FILLING:
1/2 cup vegetable broth
1 cup onions, chopped
1 cup celery, chopped
1/2 cup carrots, chopped
1-1/4 cups peas (fresh or frozen)
Saute above ingredients in broth until onions are soft. In a separate bowl mix the following:
1/4 cup oil
1/2 cup unbleached white flour
1-2/3 cups water
1/2 teaspoon garlic powder
1 teaspoon salt
1/3 teaspoon pepper
Preheat oven to 350 degrees. Add above mixture to sauteed vegetables. Pour into one pie shell and cover with the other pie shell. Bake at 350 degrees until crust is brown (approximately 15-20 minutes).
Total calories per serving: 320
Fat: 18 grams
Protein: 7 grams
Carbohydrate: 34 grams
Calcium: 33 mg
Anything vegetarian! I luv making noodles with crema mushroom (NOT crema chicken) with some peas, pepper, and parmesan in it. ITS SO GOOD!!!
You can eat lots of sweets too! deserts are always fun!
I eat fish, so I guess I am not "pure".
Get a vegetarian cookbook, and get in the kitchen! ;-)

Family gatherings with non-vegans can be tricky. I feel your pain. I eat beforehand and/or bring a dish to share.
Veganomicon and Vegan with a Vengeance by Isa Chandra Moscovitz are great vegan cookbooks that have many fancy recipes fit for holidays. The Student's Go Vegan Cookbook by Carole Raymond is a good starter if you haven't done much cooking before.

I'm vegan, and I feast on soy and rice milk chocolate... Childish habits die hard.
Bring your own food, and try making extra if you can - that way, you can share it round if anyone else is intereted.
...Usually I'd have something nice and hot (on a cold day), but right now we're having unusual hot weather! This Easter, I guess I'll take a tofu & veggie dish, marinated in lemongrass & miso... I eat easy on holidays, and tend to focus more on dessert...
Anyway, do your best ~ I bet they'll probably have salad there though (in desperation!)
A Tofurkey roast. You can find them in the health food stores around Thanksgiving; we usually buy several and stock up for future holidays.
