These are two of my faves, no potatoes, low carb & very tastey. =)

Grilled veggies with watercress cracked pepper & olives:
Chop & grill - Eggplant, Zuchinni, Mushroom, Tomato, Onion

Add some watercress leaves, olive oil, pinch of salt, cracked black pepper & a few olives. Its absolutely delicious. I had that for dinner last night.

And

BBQ Veggie & Tofu skewers:

Chop up green & red capsicum, zuchinni, & spanish onion
medium tofu cubes
whole large-ish cherry tomatoes
whole medium mushrooms

put them all on a skewer then BBQ for a few mins. make sure you marinate the tofu in what ever flavour you like before. I like to serve it with some salad, hummus and lebanese bread.

palak paneer, this really yummy indian food it has cheese and spinach.

scalloped potatoes (with soymilk)

pizza. can't go wrong therer.can't even tell a good veggie pizza is vegetarian if it got lots of cheese and onions and such.

Ever have the mediterranean veggie sandwich at panera? that thing is amazing!! I just wish I knew the recipe so I could tell you lol and their vegetarian tomato or their garden vegetable soups are amazing with the sandwich...I'm so hungry right now lol

I also like garlic and basil tofu with rice and any kind of pasta!

Gosh, I have so many... I absolutely love food. Here's a lasagna recipe from vegweb.com that takes a bit of time to prepare but is well worth the effort... plus, it leaves you with plenty of leftovers!

I love vegetarian stir fry with tofu. It's simple and easy to make. Just whatever vegtables you like, tofu, soy sauce and either rice or noodles.

Also vege lasagne, pasta, nachos with kidney beans, salad, vegetarian burgers, soups.There's loads of great vegetarian meals out there.

Sauteed broccoli, 'shrooms, snow peas and tempeh over shredded lettuce, red onion and red peppers is one of my current favorites. I usually eat it with a sesame-soy dressing.

I mostly eat Japanese and Indian food. If you want nutritional information and low calorie meals, try cookinglight.com. They have many vegetarian choices as well.

I love to have spaghetti, with tomato sauce, and Nate's zesty italian meatless meatballs...so yummy.
there are also mealstarters chicken strips, by morningstar, which taste great with some broccoli and corn.
also, Green Giant makes a mixture of noodles, broccoli, sugar snap pees, and carrots, in a garlic butter sauce.
these are three of my favorite dishes. all of them you can just put in a pan and cook up.
