Well, honey doesn't go off. It keeps for thousands of years. I haven't eaten any of the honey found in the pyramids, so I can't vouch for the taste.

Why don't you do an experiment? Buy a few jars of honey with a sell by/best before/use by date coming up soon (i.e., they've been on the supermarket shelf for a long time), and put them in the back of the pantry for a couple of years. Then in two years time, buy some jars of the same brand of honey, that haven't been on the shelf very long.

Do a comparison between the colours, textures and tastes of the older honey and the newer honey.

There probably won't be much difference. Some honeys do, however, tend to crystallise after a while. Some people think that is a sign of a good honey. Some people think that it isn't. In the end, it probably comes down to personal taste.

The container, I would look in there to check the color
