Awesome! I've wanted to buy leeks as well. I searched goveg.com for leek recipes, and this is what I found.

If your looking for a soup recipe, here's one.

Rocco’s Potato Leak Soup

Ingredients:

4 large potatoes, peeled and cubed
3 leeks, chopped
1 onion, chopped
4 tbsp of butter
1/2 tbsp of rosemary
salt and pepper
2 tbsp of flour
1 cup of heavy cream
6 cups of vegetable stock
Directions:

Sautee the potatoes, leek, onion and rosemary in the olive oil for 10 minutes.
Add the cream and vegetable stock and simmer for 35 minutes.
Add the soup to a food processor and blend it until the ingredients are pureed well.
Serve with a tsp of olive oil in each bowl

Make sure you clean the leeks really well, they tend to be very sandy/dirty btwn the layers. Then split them lengthwise, leaving the root intact. Boil for about 6 minutes, until soft, then brush with oil and grill for about 10 mins, turning half way.

Make a vinaigrette of red wine vinegar, dijon mustard, salt, pepper and olive oil.

I then sprinkle with roasted red peppers (chopped), roasted walnuts and goat cheese (if you eat it - if not, just omit), then cover with the vinaigrette.

first you need to wash them carefully (leeks hide dirt like nobody's business) Cut off the stems to where they start being lighter in color. Cut the leeks in half lengthwise and was them thoroughly.

I am a raw vegan -- I chop leeks fine and use them like onions in salads and pates. I also dehydrate my leeks if I cannot eat all of them, then grind them up and add them to seasoning mixes.

My room-mate boils her leeks in soups.
I can imagine that you could boil them or steam them and set them on a plate as the vegetable.

This one is vegetarian but not vegan.

Leek & mushroom pie:

Ingredients:
1 roll of puff pastry
3 large leeks
1 can of 200 g of cultivated mushrooms, thinly sliced
3 eggs
20 cl of double cream
400 ml of milk
Nutmeg
Salt, pepper
1 large pie plate

Making:
Wash the leeks. Cook them into the pressure cooker for around 5 minutes. Then, cut them into sections.
Spread the pastry into the pie plate. Prick it with a fork to avoid it from rising during the cooking.
Display the sections of leeks with harmony on the bottom of the pastry. Add the mushrooms on the top.
Prepare the cream : mix the eggs with the cream, then add the milk. Add some grated nutmeg, salt and pepper.
Pour it over the vegetables.
Bake in the preheated oven at 180°C for around 1 hour (check the cooking from time to time).

Servings:
4 persons

Length:
20 minutes of cooking
