What to use instead of eggs?!
Answers: When baking I usually use eggs as a binder (so my cakes do not fall apart, etc). Do you know something thet can be a suitable vegetarian replacement for eggs in term of being a binder for cakes and baked goodies?
Ground flax seed can be used as a binder (the directions are on the box) and it can also replace the fat in your cakes. I have used this and it absolutely works great. For the egg replacement it's 1 tbsp of milled flax to 3 tbsp water...for fat...it is 1 tbsp flax for every 1 tbsp of fat in the recipe...hope this helps.
I use soft tofu with a pinch or two of semolina (cream of wheat) which is a great binding agent

I believe that one of the best ingredients you can use instead of eggs may either be a egg substitute, and or apple sauce. please write me back and let me know how things turned out. oh, you might want to use a couple of teaspoons of a good oil also... good luck OH, there is one more thing you could try, low fat mayo. yes, mayo does have eggs in it but it is not the same as cracking a few eggs strait into your mixture... good luck

what about using FREE RANGE EGGS?
many vegetarians eat eggs and drink milk.. so using eggs is not a crime..
I had my own chickens who laid eggs and we used them..
fresh free range eggs are healthier for you.. and better for the chickens..
NO baby chickens die if there is no rooster fertilizing the eggs.
I would go to a natural food store and buy a box of egg replacer. It is similar to a flour and you can keep it in your cupboard for a long time - you only use about a tablespoon per "egg".. If you can't find it at a natural food store, or a health food store, ask them where you can get it.

? Cut up an apple.
? Put it in a pot.
? Add a cup of water.
? On high, boil until mushy.
? Use a blender to make it smoother.
? If is watery, filter it with a coffee filter or strainer that has small holes.
I use ground flax seed. Three tablespoon of ground flax seed mixed with six tablespoons of warm water equal about two eggs. Mix them together and let them sit for about 5 minutes and they will achieve a "gloopy" consistency like raw egg white.
A banana is actually a really good substitute, as is yogurt. Both give the nutrients that eggs can provide as well as the fluffiness they put into foods.
