I have leftover vegetable stock/broth from a vegiee stew, now what?!


Question: I dont want to toss it, i want to make something out of it or use it for something. Does anyone know any VEGAN recipies i can use with my stock?

Make soup. - You can find loads of vegan soup recipes, and use the vegetable broth for that.

Easiest way to use it is by making rice - use stock instead of water for delicious rice.

I'd say do the ice cbe thing. Buy some ice trays and fill thm with the stock. Later when they're frozen you can remove them from the trays and store them in a freezer bag with the name and date written on it. Then, just wash the trays and store for another time.

When you need stock you'll always have it!!!

You can use it to make sauces for things. A very simple example would be to start with a roux: 2 tbsp oil or vegan margarine + 2 tbsp flour. You want to cook that, stirring constantly on medium heat until the mixture turns the color of caramel. Then, add 1 cup of the leftover broth, stirring or whisking all the while. Reduce heat to low and simmer for 5 minutes or so until the mixture thickens.

I normally add onions, garlic and/or herbs, too. Works great to jazz up vegetables, for use as gravy, or whenever you need a little sauce.

Toss in a couple of chicken thighs, a breast and after an hour some veggies and noodles. Voila, chicken soup.
