You can do both. If you want to eat it raw in salads, you need to grate it. I don't like it that way though. If you are cooking it put it in a deep pan of boiling water, just as you buy it. Don't peel it or take the stalks off. You do that when it is cooked and cooled.

It needs to be cooked first.

Boil it, then scrape the outside layer off. You may want to wear a pair of disposable gloves.

To cook a beetroot, wash it and put it into a pan of boiling water. When the water boils up again turn the heat down but keep the water bubbling away. Beetroot is really nice sliced extremely thin raw on a mandolin and dressed with lemon juice and olive oil. A good cheats way of cooking it is to put the beets into a roasting tray and bake in the oven with the skin on for 2 hours at 180. Then peel and chop up to use in salads or fry or whatever. Your hands and chopping board will turn pink!

Actually i like to cook beetroots in salted water with the leafs as well,after i klean them i boil them together but i remove the leafs before the actual roots are done ,the leafs cook faster ,wen the roots are done let them cool remove the skin and cut in cubes.For the dressing i use olive oil wine vinegar salt and pepper and finely choped garlic.
For presentation cut the cooked leafs place in a salad plate and add the salad on top. You can enjoy the salad worm or cold very healthy salad,simple and delicious.

Boil whole in plenty of salted water, when cooked about 45 mins leave to cool slightly before peeling.
They are delicious served hot, cubed and covered in parsley sauce (makes a mess of your plate though}
They are also great raw in salads with a simple dressing

To cook beetroot whole, first rinse under cold running water. Cut the stalks to about 2.5cm/1 inch above the beetroot and don`t cut away the root or peel it - or the glorious deep red colour will bleed away. When serving cold in salads, or where the recipe calls for chopped or grated beetroot, peel away the skin with a potato peeler or sharp knife.

Cooking:

To bake in the oven, place the cleaned beetroot in a dish with a tight-fitting lid, and add 60-75ml/4-5tbsp of water. Lay a double layer of foil over the dish before before covering with the lid, then bake in a low oven for 2-3 hours or until the beetroot is tender. Check occasionally to ensure the pan doesn`t dry out and to see whether the beetroot is cooked. It is ready when the skin begins to wrinkle and can be easily rubbed away with your fingers. Alternatively, simply wrap the beetroot in a double layer of foil and cook as above. To boil beetroot, prepare as above and simmer for about 1 and half hours.
