Fried Bean Cakes
Yield: 16 Servings

1 c red bean paste (substitute other sweet paste)
3 c flour
2 ts baking powder
8 tb sugar
1/2 c water
1 tb veg shortening
1/2 ts salt
3 tb soy milk or water
oil for frying

Divide paste into portions. Sift flour and baking powder. Mix with all of the rest of the ingredients; knead to a smooth dough. Cut into 16 portions. Flatten each portion into a 2" circle. Let circles rest for 10 min under a damp cloth. Put 1/2 oz paste in each, wrap up, seal the seam with your fingers, and form into a ball. Flatten each ball slightly. When all are done, deep-fry at low heat for 6 min. Drain and serve.
