lemon rice: take a table spoon of oil. warm it,
put mustard seed, bengal gram (lentil) 2 green chillies cut to pieces, ginger pieces , pinch of
turmeric powder, salt to taste.
take 1/2 glass of rice, add 1 glass of water, pressure cook. now add the cooked rice to the above ingredients, add lemon juice.garnish with
curry leaves.

Make like a risotto with vegetables, I'd say;l

I like white rice with veggies.

Brunoise some onion, carrot and celery and saute with vegetable oil. Add the rice and saute until it starts to color. Then add vegetable stock, cook for 20 minutes on simmer, do not stir.

also, I like white rice cooked with raisins, apples, shallots and walnuts.

add 2 parts water to 1 part rice, add 1/2 can tomato sauce , add a can of your fav vegetable (corn,peas,or carrots)salt to taste, a clove of garlic and bring all ingredients to a boil. when it is boiling rapidly add a little bit of oil (about 1 tablespoon) and lower heat to low cover pot and cook until water is evaporated and rice is cooked tender about 30 min usually

Leave the seafood out of this and viola!! it's vegan.

Crawfish Jambalaya

12 ounces fresh/frozen crawfish/shrimp/monkfish (any firm seafood)
2 stalks celery, sliced
1 large onion, chopped
1 green pepper, chopped
1 clove garlic, minced
2 tbls margarine
1 2/3 cup water
? tsp salt
? tsp thyme
? tsp crushed red pepper
? tsp ground black pepper
1 bay leaf
? cup long grain white rice
1 15 ounce can petite diced tomatoes
3 ounces tomato paste

In 3 quart saucepan cook celery, onion, green pepper, and garlic in margarine until tender, approx 5 minutes. Add water, salt, thyme, red and black pepper, and bay leaf. Bring to a boil, add rice, cover and simmer 15 minutes or until rice is tender.

Stir in undrained tomatoes and paste, add fish cook 2-3 minutes until fish is heated through. Serve in soup bowls with a crusty bread.

cook brown rice or white... in a food processor chop a carrot into fine thin thin slices... put aside... then in a food processor blend until liquid half a yellow onion, pinch of cumin, salt and pepper.... once the rice is cooked add the carrot, and onion... then when serving add a squirt of olive oil, and sprinkle with chopped dill (you can buy it pre chopped)

I eat this with hommemade hummus, a toasted pita (if not vegan add some cheese before toasting) , greens, veggies (red wine vinegar, olive oil, oregano as a dressing for greens/veg)
