Vegetarian 'tuna salad'??!
Answers: Help! I miss my tuna salad sandwich now that I'm vegetarian. Any good tuna alternatives out there?
Here is my favorite vegan sandwich recipe, from The Peaceful Palate by Jennifer Raymond.
It is listed there as "Dolphin-Friendly Mock Tuna Salad" but I don't think it tastes like tuna and I dislike comparing veggie foods to animal products anyway.
1 15-oz can garbanzo beans
1 stalk celery, finely chopped
1 carrot, grated (optional)
1 green onion, finely chopped
2 tsp. mayonnaise or mustard
1 tbsp sweet pickle relish
1/4 tsp. salt (optional)
Mash the garbanzo beans with a fork or potato masher.
Leave some chunks.
Add the sliced celery, grated carrot, chopped onion, mayonnaise and relish.
Add salt to taste.
Serve on whole wheat bread or in pita bread with lettuce and sliced tomatoes.
Makes 4 sandwiches.
Chickpea Mock Tuna Salad
A vegetarian "tuna" salad made with chickpeas, almonds, and seeds. Tuna fish was the very last meat that I gave up, and while this doesn't take exactly like tuna salad, it's close enough that I don't miss the real thing any more.
Yield 4 servings
Time 45 minutes + overnight soaking
Tools sieve
large bowl
food processor
rubber spatula
plastic wrap or lid for bowl
Ingredients ? c almonds
? c sunflower seeds
? c sesame seeds
several c water
1 c soaked + cooked or canned chickpeas, drained and rinsed
2 T lemon juice
1 T water (can be from chickpea cooking water)
1 T soy sauce
2 t flaxseed or olive oil
1-2 t kelp powder
? c mayonnaise
1 stalk celery, minced
1/3 c red onion, minced
2 T fresh parsley, minced
Directions Rinse the almonds and seeds (a sieve or fine-holed colander is needed for the sesame seeds), place in bowl, cover with water, and let soak overnight. Rinse and drain.
Place the almonds, seeds, chickpeas, lemon juice, T water, soy sauce, oil, and kelp powder in food processor. Blend until well mixed but not quite smooth, 1-2 minutes.
Combine the mayonnaise, celery, onion, and parsley in the bowl, then add chickpea mixture. Cover and refrigerate for at least 30 minutes.
Notes This mock tuna salad will last 2-3 days in the refrigerator.
Try using this recipe for a mock tuna crêpe or a mock tuna melt.
instead of putting tuna you can put little cut picies of vegetrian meat stuff like that and you can add with mayonaize and mix it with bread
Why dont you just have the tuna? Im sure nobody will call you a fake veggie if you have the odd relapse every now and then for something you really enjoy
Italian Tuna Salad Sandwiches with Black-Olive Dressing
ingredients
3/4 cup chopped flat-leaf parsley
3/4 cup black olives, such as Gaeta, Calamata or Nicoise, pitted and chopped
1/2 cup extra-virgin olive oil
4 anchovy fillets, minced
3 garlic cloves, minced
1 1/2 tablespoons fresh lemon juice
1 tablespoon chopped thyme
Salt and freshly ground pepper
6 ounces snow peas
2 (6 ounce) jars or cans of imported olive oil-packed tuna, drained
4 crusty rolls or 6-inch lengths of baguette, halved
1 small red onion, thinly sliced
2 medium tomatoes, sliced 1/3 inch thick
4 hard-cooked eggs, sliced 1/4 inch thick
Direction:
In a medium bowl, mix the parsley, black olives, olive oil, anchovies, garlic, lemon juice and thyme. Season the dressing with salt and pepper.
In a small pot of boiling salted water, blanch the snow peas for 1 minute, or until they are bright green and just tender. Drain the snow peas and refresh them under cold water, then pat dry. Slice the snow peas lengthwise into 1/4-inch strips and toss them with 1 tablespoon of the olive dressing.
In a medium bowl, lightly break up the drained tuna with a fork. Add 6 tablespoons of the olive dressing and toss gently.
Spread the cut sides of the rolls or baguette pieces with the remaining olive dressing. On the bottom halves of the rolls or baguette pieces, arrange the snow peas, followed by the red onion slices, the tomatoes, tuna and sliced eggs. Close the tuna sandwiches and serve.

You don't say if you're ovo-lacto or not. If you are not strictly vegan, quorn.com makes some meatless alternatives out of mycoprotein (fungi like mushrooms) and egg whites. While they only have 'chicken' and 'beef' at the moment, you could try substituting the 'chicken', diced for the tuna...

Tuna is good for you. Tuna is high in selenium, a trace element that is good for your hair :-)
even though I hate meat and fish but anyway :-)
Try Indian samosa sandwich or vegetable patties.

IT-TASTES-LIKE-TUNA SALAD
1 cup sunflower seeds
1 cup almonds
1/4 cup brown sesame seeds
1/2 cup celery, chopped finely
1/2 cup red & yellow onions, chopped finely
1/2 cup fresh parsley, chopped
1/3 cup water
1/4 cup lemon juice
2 tsp Braggs Liquid Aminos
1 tsp onion powder
1 tsp powdered kelp
1. Soak nuts & seeds overnight and let drain for 3 hours.
2. Blend nuts, seeds and seasonings in a food processor or blender.
3. Add nut-seed blend to veggies and mix well.
4. Chill before serving (optional).
HELPFUL HINTS:
Serve on lettuce with 1 tsp garlic powder sprouts, or stuff into celery or mushrooms.
Roll up lettuce leaves & sprouts to make delicious finger food. Fasten with toothpicks.
For variation: substitute lime for lemon and cilantro for parsley.

Vegan tuna fish sandwich
I stumbled upon this version today after numerous experiments. It's simple, easy to make, and delicious.
Ingredients
4 oz extra firm tofu
4 tablespoons Nasoya "Nayonnaise" or similar product (vegetarians may wish to substitute real mayo)
1/2 pound seitan (I use White Wave Chicken Style)
1 tablespoon tahini
6 slices of bread
Pinch of salt
Method:
Blend the tofu, Nayonnaise, and tahini in a food processor. Add the seitan. For best texture, run the food processor just long enough to chop it into little pieces.
Skip the salt if you wish, but be aware that tunafish is salty stuff. If you are trying to please a tunafish eater, keep the salt.
Notes:
Makes at least three generous sandwiches. I grilled my bread in a drop of olive oil, with a clove of garlic and a bit of salt and pepper, resulting in a very convincing "restaurant-style" sandwich.

Veggie Tuna (Raw)
INGREDIENTS
5 lb / 2.3 kg of carrots, peeled
2 stalks celery
1 bell pepper, chopped (optional)
1 small red onion, diced
1 large tomato
1/2 cup eggless mayonnaise
2 TBSP tamari (or soy sauce)
1 TBSP sea salt or other salt substitute
2 tsp kelp seasoning
METHOD
Juice the carrots in an electric juicer. Save the pulp to make this dish and enjoy the juice as a refreshing beverage.
Finely chop the celery, bell pepper, onion, and tomato. Add the pulp of the carrots to the chopped vegetables. Knead the eggless mayonnaise into the carrot pulp mixture. Next knead in the tamari. Finally, knead in the sea salt and kelp seasoning.
