Ok, I have these ingredients and I'm totally stumped for something to fix for dinner for four people.?!


Question: Here is my list of ingredients (need to keep it vegan).
Vegetables:

Sweet potato
White potato
Eggplant
Turnips
Beets
Beet Greens
Carrots
Red onion
Cabbage
Celery
Sugar Snap Peas

Grains:

Brown Rice
Quinoa
Millet

Fruits:

Grapefruit
Oranges
Apples

Frozen Fruit:
Assorted organic berry mix

Fresh Herbs:

Parsley
Mint
Basal
Garlic

Nuts and Seeds:

Sesame seeds
Flax seeds


It doesn't have to be a three course meal, just something kind of filling as it's me, my two grown daughters and 3-year-old grand daughter who loves anything with vegetables!!

Oh I'm out of flour except for corn flour (cornstarch).

Oh I'm out of flour except for corn flour (cornstarch).

Cook the brown rice. In a separate frying pan, saute 3 cloves of thin sliced garlic and red onion in olive oil til a little transparent. Then add thin sliced carrots and let them cook. You may need to add a little more olive oil or water. Add sliced eggplant, snap peas, and sliced celery. When your rice is almost ready add the parsley to the rice. When the rice is ready mix it all together. Sort of like a vegan paella!!! :>

For dessert, if you have peanut butter, add to apple slices.

heat oven to 400 degrees. melt stick o butter in a baking dish add cleaned and cut up potatoes white and sweet, beets, celery, and red onion. sprinkle liberally with salt and pepper. bake uncovered until tender. turning often being careful not to break up veges. while thats cooking, make one of your grains to serve with it. thaw the berries for dessert
