Vegetarians, what would be a basic day of eating for you?!

Today I had:
Breakfast: Kashi puffs cereal with soymilk and a banana.
Snack: orange
Lunch: Spinach salad with walnuts and apples in balsamic vinaigrette dressing
quinoa and lentil pilaf
Snack: apple
for dinner I'll probably make some chana masala with brown basmati rice and roasted brussels sprouts. Or vegan mac n’ cheeze, haven’t decided yet.
Oh, hey look at that, no carrots today. Darn!
Well being vegetarian gives your many options as vegetarians still eat eggs and dairy. Breakfast might consist of a Spanish omelet. This would be made with 2 eggs, 2 tbsp. water (to make your omelet fluffy) and monterey jack cheese or cheddar cheese along with onions, green peppers and mushrooms. Top this with warmed salsa. You could also have two whole wheat burritos made with beans and cheese or eggs and cheese. I usually eat oatmeal and have a banana and a glass of soy milk (but I'm trying to be vegan, not vegetarian).
For lunch, a big salad with the works (no bacon bits, ham or pepperoni of course). Or I might have a veggie sub from Subway. Of course there is always soup, grilled cheese, egg salad and fruit salad too.
Supper for me is usually a bowl of beans and a salad. There are many options. I suggest you get a good cookbook like Vegetarian Times...and of course there are plenty of online recipes. Hope this helps.

Dinner - Vegetarian lasagna and potatoes
Snack: A bar of dairy milk (I go mad without a daily dose of chocolate, lol. ^_^)
Well today I had:
B- Corn flakes and milk a banana and some hot tea
L- Peanut butter and jelly sandwich, chips and green grapes with a glass of milk
D- Cheese and bean enchilidas, rice and chips and salsa
Today, this is what I ate:
Breakfast: Small plate of whole-wheat pasta with butter and Parmesan cheese (I don't eat typical breakfast foods, LOL)=
Lunch: Sandwich on whole-wheat bread with Italian dressing, tofurkey, lettuce, and tomato.
Snack: Grapes + Kashi whole grain crackers.
For dinner I'm planning on making some rice mixed with spinach and different types of cheese. :)
Typically for snacks, I eat things like pita bread and hummus or tortilla chips and hummus, crackers and cheese, banana and peanut butter, chick pea salad, etc.
My diet includes soymilk, soy meat, tofu, etc. I mostly eat everything except for things that have or used to have eyeballs!

Breakfast: three slices of toast with peanut butter

typical breakfast- 2 packs of oatmeal with raisins and orange juice or an orange OR morninstar soy sausage with cheese on mini whole wheat bagel
snacks- apple with peanut butter OR carrots and celery with hummus OR trail mix and grapes OR salsa and pretzel chips (I make my own salsa so it's healthier) OR popcorn
lunch- varies, i try to make a big pot of food and then have leftovers for lunch... so might be veggie chili (love it) OR brown rice with mixed veggies and beans OR amy's burrito and a salad OR minestrone soup OR peanut butter and jelly on whole grain bread and slice of cheese OR whatever else i have
dinner- varies, veggie burger with sweet potato fries OR chicken patty with spinach OR soy steak strips with veggies and dumplings OR soy ribs with mashed potaos and veggies OR whole wheat pasta with veggies and tofu in pesto sauce OR some other mixture i throw together :P
that's general... i try to mix it up, buy different things, cook different combos.
My meals are just as diverse as that of a non-vegetarian. They make vegetarian substitutes for just about everything.
breakfast..2 sliced white bread(spread with thin layer of low sugar jam of any flavor) with hot chocolate
lunch...1 handfull steamed brown/white rice with any 2 types of stirfried vege and maybe mockfish cooked in soy sauce with/or tofu curry
snack....diced fruit(i love figs,starfruit and pineapples..how about you?)
dinner...thosae/idiappam/banana &/or cheese bread(not more than 2 slices) with lentil curry,grean peas curry(2 table soon of each curry) and ground mint chutney(just 2 teaspoon full)
snack..1 scoop of ice cream(any flavor) or 1/3 bar of dark chocolate
today i had
breakfast: english muffin banana and kashi go lean crunch with soy milk
lunch: veggie panni with peppers tomatoes olives etc... and wheat thins
snack: apple (carrots-sorry!), popcorn
dinner: veggie burger with loaded french fries with immatation cheese and immatation bacon bits
it's not hard once you get use to it to start out i recommend eating some of the veggie replicas like veggie burgers and corn dogs or chickenless patties oh have to tell you for sunday my parent who aren't vegetarians wanted me to come over for dinner and bought me veggie bbq ribs so i had that greens and veggie friendly mac and cheese it was great!

Dinner: Varies every night. This week I've made mushroom ravioli, vegan mac 'n' cheese, Gardernburger riblets, Irish oatmeal, and a veggie burger.
I eat fresh fruit or veggies as snacks. I drink water with every meal as well as eat fruit.
For breakfast I might have:
A bowl of steel-cut oats with raisins, flax seeds and rice milk

A bowl of whole-grain cereal topped with flax seeds and rice milk
For a mid-morning snack I might have:
A few handfuls of homemade trail mix (that includes nuts and seeds)

Some whole-grain Kashi crackers and hummus
For lunch I might have:
A large tossed salad (no dressing) and a piece of fresh fruit (apple, banana, pear)

Leftovers from last night (haha!)...A veggie sandwich with all my faves - lettuce, alfalfa sprouts, onions, tomatoes, cucumbers and hummus in lieu of mayo
For dinner I might have:
Black beans and rice
Black bean burritos
Tofu & veggie stir fry
Mashed or baked sweet potatoes with wild rice and mock meatloaf
Spaghetti
Vegetable soup, salad and crusty bread
Soft tacos (with soy cheese and veggie "ground beef")
Broccoli and (brown) rice casserole
Homemade veggie pizza (on wheat crust)
Spinach lasagna
Sauteed vegetables with quinoa
I usually eat salads for lunch every day...I rarely eat junk food and I use my juicer a lot. As long as have a variety in your diet, you should be good!
