Essentials?!
What are the essentials, or staples, for everyday eating(breakfast, lunch, dinner) in your opinion?
She is also wanting to try this as a weightloss tool, so anything that would contribute to that would be excellent.
Also, she's concerned about her lunch- she needs it to be as quick and easy as possible as she only has 30minutes to eat.
Answers: I am already veg, but I'm having my girlfriend try it for two weeks starting next week.

proteins, veggies, fruits, whole grains.... if your already a veg you should have a pretty good idea right?
as for quick lunches.... soups are good bc you can make them in advance and heat them up. today i had a chicken salad (i like the morninstar chicken strips the best and they heat up in under a minute). how bout brown rice with veggies and either beans, tofu, or a soy meat of her choice? you can get frozen veggies too. wraps are good too. my biggest suggestion is just cooking meals in advance and then bringing for lunch. veggie chili is another good one.
my "staples" are the soy/fake meats, diced tomatos (use for so many things!) beans, hummus and peanut butter, and an assort ment of fresh fruits and veggies.
Can't go wrong with fruits and vegetables. Banana's for a snack. Try to get eggs from a local free range if you can. I like the Boca burgers and Morning Star product line, just pop it in the microwave. Found Amy's Organic soups and vegan chilis quick and easy also. You can get all of that stuff here at any Wal-Mart, and it's as cheap as any other microwave thing

What are the essentials you have? Unless you're terribly atypical, you should give her a list of your pantry essentials and let her use that as a guide.
Sandwiches and salads are good for quickie lunches. She can prepare all the veggies, put the dressing in a separate cup, and mix before she eats.
Check out The Vegan Lunchbox; it's a mother's chronicle of the foods she makes for her son to take to school. Presumably he has limited lunch time, so she has to provide meals that can be eaten quickly.
