VEGETARIANS Would you please give me an idea of your menus for a day or two? What do you eat?!
for a day or two if you could.
Recipes, if necessary.
I am really considering 'switching over.'
I LOVE meat, but I am sick and tired
of the prices of meat.
Any sort of substitutes that are convincing
to the palet, or are they more expensive
than meat?
I have seen the 'films' and they make me
furious at the slaughter houses, etc.

This is what I ate yesterday and it is a fairly typical day:
6.00am – Fresh carrot, ginger & orange juice
8.30am & 10.30am – a fresh fruit salad consisting of mango, strawberries, blueberries, apples, grapes, figs.
1.00pm – a roasted pumpkin & capsicum vegetable flan with a fresh mixed salad of lettuce, tomato, cucumber, avocado, grated carrot, grated beetroot.
I was really full after lunch but made the mistake of having pudding – half a caramel kiss, two pieces of chocolate and some dried organic figs.
Stuffed (groan and moaning) most of the afternoon.
Will often have some dried figs or nibble mix in the afternoon between lunch and dinner but didn’t yesterday.
6pm – raw vegan nori rolls and several glasses of white wine.
9pm – handful of grapes
Often in the evening I will have several vegetable juices instead of a solid dinner. I find it helps me sleep better and I feel better in the morning. I have only started to do it in the last two months but it seems to really suit my body.
When I first started I did feel hungry all the time but this only lasted three weeks and then my body adjusted. My appetite has shrunk considerably since I gave up meat and it takes less to fill me up.
When I ate meat there was no way on earth I would ever have considered having just vegetable juice for dinner but now just having 500ml of juice fills me up for the night.
If you love meat but hate the price, maybe you should just limit your intake (i.e.) only have meat once a week or once a fortnight. This is what I did when I started eating vegetarian / vegan, eventually I realised that I didn’t love meat as much as I thought I did and every meat meal would leave me feeling tired or sick.

EDIT: i'm never hungry.. and i eat what i want to.. i LOVE it.. i think the trick was more for me was not to go out to eat all the time like i was used to.
if you like the taste of meat try the "soy meats" it's easy to make the transition this way because you can take pretty much any meal you had before and just sub in the soy version.
spaghetti and soy meatballs
tacos and burtiots using soy ground meat
veggie chili using beans, soy ground meat, veggies
wraps using soy chicken strips or beans
soy ribs with potatos and veggies
soy hot dogs with the usual works!
tofu and veggies stir fried
scrambled tofu, veggie sausage, cheese, peppers and onions
the list goes on, just start mixing things together and trying new things til you find what you like!
_breakfast_
cereal with soy milk
toast with jam or soy spread
fruit
maybe a soy yoghurt
_lunch_
salad sandwich, ie. lettuce, tomatoes, sweetcorn etc/
popcorn/
veg soup/
pasta with tomato sauce/
chips/
fruit
_dinner_
tofu//chickpeas//soy beans//baked beans//Quorn fake meat ie. chicken or mince//Dunnes Stores or Tesco fake meat burgers//veggie burgers//nut cutlets

or pizza
_dessert_

swedish glace
Alpro soya dessert
_snack_
chocolate rice cake
NutriGrain bar or similar
etc etc
and I drink plenty of water.
I'm a vegetarian but I hope to be a vegan soon. I think most of these things I listed are vegan, but it's more difficult.
Good luck and good for you!
And Quorn and Tesco do pretty good meat substitutes. Especially Quorn.
and to answer the second part of your question - no. Being a vegetarian won't make you feel hungrier. You can even be obese on a vegan diet. You just need to make sure you plan it well.
Breakfast: I always eat three slices of whole grain toast with either Peanut Butter, Margarine, or Hummus
Lunch: Leftovers from dinner the night before, usually. If I go out to eat I get falafel wraps, vegan chinese or a hummus-lettuce-pickle sandwich.
Snack: apples, oranges, kiwis, frozen red grapes, yum! Sometimes I'm really bad and eat half a bag of potato chips!!
Dinner: -Soup, salad, and garlic bread
-Marinated tofu and brown rice or quinoa
-Veggie burger and a side of tofu "egg" salad
-Indian curry rice and lentils
-etc.
The only semi-convincing faux meat products I've tried are made by Tofurky or Turtle Island Foods. Their Hickory deli slices, Italian "Sausage," and Kielbasa are great.
Lets see...
9-10am: I have a granola bar and/or a package of fruit snacks.
11am: Some triscuits or some other snack like pistacios or walnuts.
12pm: Lunch. A salmon filet and some ready rice, and a can of corn. Some more crackers. A peice of chocolate or a twinkie.
130pm: Some pretzels or anothe fruit snack or granola
5pm: Snack again on something like cottage cheese, yogurt, cheese sandwich or veggie corn dogs.
7pm: Dinner. Nachos! Vegetarian chili w/beans over tortilla chips with shredded cheese, black olives, chives, black beans, veggie refried beans, lettuce, tomatos and salsa...all the fixins. Some juice, water, or soy milk to drink.
Today I had a very unhealthy breakfast: A twinkie to start, 2 packs of fruit snacks, some crackers, tuna filet for lunch. and a chewy granola bar.
That was my day yesterday. I will mix it up with all sorts of good stuff.
Go veg, it is awesome. Einstein was a vegetarian and so was gandhi! You can do. Some of the most powerful people are vegetarians or vegans. Takes alot of will power, more than any task out there. Good luck!
Morning star farm has great food, kinda expensive though, it will defeat your purpose in becomming a veggi. Their Chik patties dipped in honey taste just like I remember mcnuggets to taste. And theri sausage patties taste like the real thing, so do their faux corndogs! MMMMMMM
Breakfast: Wheat toast with no-salt added, organic peanut butter (which is just crushed peanuts in their own natural oil), apple
Lunch: Stir fried veggies in a pita pocket, apricot
Snack: Basic 4 cereal or another small piece of fruit. Grapes or raisins are awesome. Nuts are good here, too.
Dinner: Wheat crust pizza (homemade or store-bought) with homemade or store-bought pizza sauce, vegetarian soy cheese, pineapple, onion, and spinach
Day 2
Breakfast: Soy strawberry yogurt from Silk, Organic cornflake-type cereal
Lunch: Unsloppy joe ( http://allrecipes.com/Recipe/Unsloppy-Jo... ) on whole wheat bun, sprinkled lightly with vegetarian mozerella, and a plum, possibly a salad on the side (depending on how active I am)
Snack: Banana, apple juice or some fresh steamed broccoli
Dinner: oatmeal with cinnamon and pecans with a breakfast burrito on the side-whole wheat tortilla, egg white (scrambled), 1 small red potato, 1 very small zucchini, 1 very small onion, vegetarian cheddar or mozerella cheese: scramble the egg white, put to the side. Heat a skillet with a little oil or margerine in it, add finely chopped zucchini, red potato and onion. Saute veggies until tender (I sprinkle mine with garlic powder, pepper, paprika, cumin and onion powder while it cooks). Flop a tortilla on a plate, add as much of the veggie mix as you like, top with egg white, sprinkle with cheese, fold over, pop in the microwave for 30-45 seconds to let the cheese melt and voila. Yummies.
I don't really eat meals, I'm more of a grazer.
A day could be:
Hemp milk or an odwalla bar (pregym)
Post workout protein shake (I lift, so I use rice protein afterwards, with almond butter & banana, and omega 3-6-9 oil)
Stir fry with about 4 cups of stir fry veggies, mostly broccoli, with or without lightlife chik'n strips and a szechuan sauce (from jar.)
Apple with unsalted almond butter
Steamed greens (i.e. kale or collards) with garlic and lemon juice.
Refried beans with onions, pico de gallo, & guacamole.
If i'm lazy or at work I'll just go to taco bell & get a bean burrito fresco style with guacamole.
eta: no, i'm not hungry because I eat enough calories.
salads and soy meats.
