Dessert - Pudding
INGREDIENTS
1/2 cup carob powder
1/4 cup medjool dates, pitted
3 large ripe bananas, partially frozen
1 cup pignoli nuts, chilled
METHOD
Process with S blade into a smooth creamy pudding adding just enough water to reach a thick consistency. Be careful. Don't add too much water. Pour in parfait cups and serve.

Carob cookie
INGREDIENTS:
3/4 cup raw walnuts
1/4 cup raw carob powder
1 cup raisins
PREPARATION:
Process all ingredients in a food processor until fine and sticky. Shape into balls and enjoy!

Make brownies, if you eat eggs & milk it would be nice to add. Look up a recipe on the internet for a vegan brownie recipe.

I had the most awesome raw vegan dessert - and I dare any meat eater to call it yucky after they taste it!

It doesn't use your carob powder, but I'm sure you could come up with a way to incorporate it if you really wanted to.

Take 2 cups of raw cashews and soak them in @ 1 cup of water with 2 tbsps lemon juice until the liquid is absorbed. You may have to soak them overnight and add more water - you want the cashews to absorb as much liquid as possible and be very soft.

Puree the cashews until smooth, add water/lemon juice a tsp at time (if necessary) to get a nice spreadable paste.

In a springform pan, press 2 cups of finely chopped raw pecans onto the bottom. Spread with the cashew paste. Top with fresh berries - a combination of strawberries, raspberries, blueberries are nice. Drizzle with raw agave nectar.

Enjoy!

If you find a recipe that calls for cocoa powder, you can use the carob powder in the same proportion. But you might want to consider mixing carob and cocoa powder so it's not such a shock to the family!
