Congrats on deciding to go vegan! I was vegetarian for 12 years before I figured that one out.

It depends on your personal tastes of course, but many ethnic foods especially lend themselves to the vegan diet. Middle Eastern (i.e. falafel, cous cous, hummus, baba ganouj) Mexican dishes of all kinds (just leave out the sour cream and cheese and double up on the guac! or get vegan sour cream and cheese alternatives), Italian (pizzas, pastas), Thai (watch out for fish sauce!), and Chinese cuisine are all full of dishes you can easily make vegan.

If you're not already familiar with tofu, try it! It's very versatile and can be prepared in so many ways. Nutritional yeast can be used in whipping up some awesome homemade cheese substitutes. Tempeh and seitan can add protein and substance to any meal. And of course a variety of beans/legumes, seeds/nuts, vegetables, fruits, and whole grains are all needed for a well rounded healthy diet.

i take spirulina, which is a green algae that has LOTS vegetable protein and B-12. you can get it in a health food store. it boosts your immune system to.
i eat lots of beans and hummus. lots of green leafy vegetables like raw spinich. LOTS of fruit; apples, bannanas, mangoes, oranges, etc etc.

you dont need a baby calfs breast milk! ;)

Nuts are crucial for vegetarians because vegetarians often don't get enough protein. Try subscribing to PETA for tips.
