Over time, the cheese craving goes away. I loved feta cheese. I loved cheese with crackers and good wine. After a few months of being vegan, I can't stand the idea of cheese. -weird but true. I ate feta cheese to test my theory. I really disliked it.

there are non-dairy cheeses out there. they sell them at walmart in the produce section next to the tofu. good luck.

why?

I have yet to find a really “convincing” vegan substitute for cheese. I just stopped cold tofurky and then started making my own vegan "cheese" at home. It doesn't taste exactly like dairy cheese, but it fills the same craving for me and after I took a break from dairy cheese I find I don't miss it at all. Vegan Gourmet and Tofutti and several other brands make vegan cheese substitutes, you can try them out to see if you like them, but I find they’re kind of expensive for what you get out of them so I don’t buy them very often.

Check out the Uncheese cookbook for "cheesy" dairy-free dishes. http://www.amazon.com/Ultimate-Uncheese-...

The best substitute for cheese is not to give it up. If you want your cheese and eat it to, then I suggest you become a flexitarian vegan. You get all of the benfits of a vegan diet without the awkward social stigma or restrictions of the food that you love and are healthy.

apples.

It's no substitute for good gooey cheese, but I use the recipe for the cheese sauce on the Vegan Eggs Bennie in Sarah Kramer's book How It All Vegan.

It makes great pizza, great nachos, great veggie dip. It's super easy to make and store. I've added garlic and chives and put it on potatoes.

I try to avoid a lot of the highly processed fake cheeses. You have to be careful because unless they're marked Vegan - they aren't. Many of them use milk by-products but call themselves non-dairy.

I didn't cut the cheese (harhar) cold turkey. I mean, I went vegan for Lent at first. I really missed the cheese. But then I ate it less and less. Until I lost the craving. And I don't beat myself up when I slip. It's not like the Secret Society of Vegans is going to come and... OOPS! They found me!!!
