Spicy Veggie Chili
2 small onions or 1 large, chopped
4 cloves of garlic
2 or 3 cans beans, drained (pinto and kidney are my faves although i sometimes use aduki beans)
2 or 3 cans diced tomatoes with chilies or jalapenos (rotel is a good brand) use 1 can fo tomato to every can of beans
1 package Morningstar farms grill crumbles (textured soy proteins that are like ground beef)
4 or 5 tbsp chili powder( i really do my seasonings to taste so this is approximate, start small and add to taste)
1tbsp cayenne
3 tsp garlic powder
salt crushed black pepper to taste

saute the onions until they are glossy and tender, then add the garlic and saute for another minute or so (careful not to burn the garlic) then pour in the beans and let them cook for a few minutes, followed by the tomatoes. season the bean and tomato mix with the seasonings above and then add the morningstar crumbles and mix until warmed and fully incorporated. make sure the seasoning is still good, and then let the chili simmer until you eat it. if you want it to be spicier try chopping some fresh jalapenos or other peppers (such as poblano, or if you're really daring habanero) and adding them in or just adding more chili and/or cayenne.
