You may enjoy stuffed peppers(which will be my easter entre). It is very flavorful, and easy to make. The combinations of different veggies, spices, etc, really give it a great taste.

I do not follow any specific recipes, I just add what is in the kitchen. I start by boiling rice in a vegetable bullion cube. I chop up broccoli, grated carrot, red onion, garlic, tomato, tofu, couple of spoons of tomato sauce. When the rice is cooked I mix all the ingredients together and place inside of the pepper, I sprinkle the top with seasoning. I allow it to cook at 350 for about 20min.
