Carrots were originally the colour of Beetroot (dark red or purple). The Dutch messed around with them genetically and came up with the orange carrot we know today. Now growers and retailers are going back to their roots so to speak and having them in their original glory of all colours.

The same way that there are different colored flowers, onions, potatoes, grapes, apples, etc.

i know they have "novelty carrots" that are bred in pots to give them a color scheme effect. they have purples and whites and deep reds as well as the classic orange. they have a variety of different tastes as well. carrots are taproots and can be cross bred easily with herbs and spices also for different flavors.

just like there are different varieties of apples, onions, potatos. I've seen purple carrots so dark from a distance they look black! There are yellow carrots too. Never saw blue carrots but I have seen blue potatos no fooling they are expensive though! www.rareseeds.com might be able to answer your question as to how it's possible! What do you think every food to stick to one colour? I think the creator of the world wants variety! Gardening would be dull if each vegetable came in only one colour! Oh by the way I've seen orange parsnips! They are much lighter orange than carrots!

Carrots have been grown since biblical times, when they were purple and yellow. Then they came to Europe and some became orange or red. Orange is just more popular. They are all good, just different tastes and textures.

It's called biodiversity.

they thats the growers have crossed genes over and added something to make them change colour.

Like when Peruvian Blue Potatos showed up. New or re-marketing of old Varieties! Aren't they cool? I'm just starting to see them here in the "boonies" & I plan to work with them in my meals.
