I went a few months ago. There is an all-veggie dish on the menu that they cook at the table like they do the meat. I don't see it on the menu that surelynotme posted, but I think it was just called Hibachi Vegetables. I couldn't find it on the online menu when I knew I was going either, so I wasn't very hopeful, but there it was on the menu when I got there. At least when I went, they cook all the veggies first, so the grill is clean. If you don't do dairy, though, be warned that they will slap a big wad of butter on your veggies towards the end of the cooking so be prepared to ask the cook not to (if you're OK with dairy, ignore that part.) My veggies were good and they serve rice with it. The worst part is that you leave the restaurant smelling like meat.
Why not look at their menu? http://www.benihana.com/
salad
the veggy dish whatever that is just no carrots, no soy sauce, no potato(if you have to though the red ones are kind of ok if you must eat potato, they're call "red rose"), no celery, no garlic, no salt (usless they have sea salt).
Don't worry about potatoes or salt.
Yes, they will make you veggies. Just ask to have them cooked first with no butter. They'll probably have veg oil or water. Also, I absolutely love vegetarian sushi. It usually is slightly cooked veggies and japanese pickles. Their salads are usually pretty good. Don't eat the soup because they might tell you it is vegetarian but it probably has dashi which is fish stock.
Also, you can order something from the menu like Yakisoba (stir fry noodles) or vegetable tempura.
Have fun!
You can get Veggie Sushi & they will cook up Veggies(no meat/chicken or shrimp) right there at the table for you. I go with friends all the time & that is what I get. Just ask for want you need.
