I am a vegetarian and I was wondering if any one had some good dishes for veggys??!

you can make a VEGAN quiche.......and it is hands down good.
buy some Morning Star Farms veggi meat and play with that some. Dont just limit yourself to tofu and salads girl!
Have some fun. I buy Morning star Chic nuggets, chic patties, and grillers prime. I also like Worthington Foods products, you can "doctor" them up like meat....You can even have a bbq with this stuff when you get good enough at it ppl will not know you didnt make meat. Just think like this "what would I eat if I had meat"? then , once you decide, make it....Like for instance, I like Jamaican food. I wanted Curry Chicken and rice. so, I looked up a regular curry chicken dish, and made it instead with Veggi meat. It was delicious. The sky is the limit with being vegetarian........here is a good idea for you........Whatever state you live in , go to this place called the Adventist Book Center (ABC)....go into that store, and i PROMISE it is VEGETARIAN HEAVEN!!!!!!!!!! You will go nuts with all the things you thought you had to let go of, just to discover there is a vegetarian substitute....try it once....visit ABC and think of me once you get your food
ps on thanksgiving, get a veggi turkey from ABC too!
Do you eat eggs? If so, go for a veggie quiche. Oh, yum! Get a recipe on line by Googling veggie quiche. You can use any veggies you like and any type of cheese for a large variety of dishes. Be sure to invite me over when lunch is ready! Don't forget a nice salad to go with the quiche.
I love this recipe
1/2 pound asparagus, rough ends removed
2 medium bulbs fennel, with stalks trimmed and set aside
4 tablespoons olive oil
1 medium Spanish onion, chopped into 1/8-inch dice
1 1/2 cups rice, Vialone Nano or Arborio
4 tablespoons butter
3/4 cup grated Parmigiano-Reggiano
1 bunch Italian parsley, finely chopped to yield 1/4 cup
Measure 4 quarts of water and bring to a boil. Add asparagus stalks and 2 tablespoons salt. Set up ice bath next to the pot. Blanch asparagus for 1 minute, place in an ice bath and keep the asparagus cooking water until later. In the meantime, chop fennel into 1/2-inch batons and place in a 12 to 14-inch fry pan with 3-inch sides. Place over medium heat with olive oil and onion. Cook over medium heat until softened but not browned. Add rice and, stirring constantly, cook until rice turns opaque, about 2 minutes. Add asparagus cooking water until it covers the rice. Turn the heat up to high, stirring constantly, and cook the rice until the liquid level goes below the level of the rice. Continue adding the warm asparagus cooking liquid, 1 ladle at a time, to maintain the liquid level above the rice for 15 minutes. Drain asparagus and chop into 1-inch pieces. Add asparagus to rice and cook until rice is soft but still al dente. Remove from heat, add butter, Parmigiano and parsley and stir through.
