I guess both assertions will be accurate. It seems a bit silly to me to give it a name though. I mean, so you aren't eating beef, pork or poultry, but if you still eat fish 7 days a week, what exactly do you think you're achieving?
For example, if one has a healthy cut of beef (say sirloin) for dinner the first day, pork loin the 2nd day and a boneless, skinless chicken breast the 3rd day and another person has fish all 3 days, what's the achievement? Why give that a name?

Yes, they exist. What annoys me is when they call themselves vegetarians - there is a guy in my office who eats seafood but not meat or poultry and always tells people he is a vegetarian....

All words are made up. It happens whenever there is a definition that lacks a word. "Vegetarian" is a relatively new word in the English language, having only been coined in the 1840s. "Vegan" is even newer, dating from the 1940s. I think there are enough people who, for health reasons or for a desire to limit their impact on animal cruelty, have decided to cut out all meat except for fish from their diet. It's a reasonable choice and they have every right to make it. As a veg*n, I would VASTLY prefer that they have their own label and that the world at large comes to know what it means, if only because over time it may lessen the confusion about what vegetarians eat. I'd prefer not to be offered fish at every turn because everyone knows someone who is a "vegetarian" but eats fish. That is a definition seeking a word. It's not about loving labels, it's about the usefulness of labels.
I've been calling them "fish-etarians". "Pescetarian" sure does sound fancy, though. Yes, it is a made up name for people who tell you they are vegetarians but will eat fish.
