Recipes for a complicated boyfriend?!
He doesn't eat meat or poultry, but he eats fish. He has a generally very healthy diet with lots of fresh fruit and veg, but he won't eat dairy except for a small amount of dark chocolate. He does eat dairy substitutes though, like soy milk, yogurt and cheese.
It's his birthday soon and I'd like to be able to cook a lovely meal for him, maybe two or three courses, with a dessert preferably. Does anybody have any nice recipes they'd be willing to share?

How sweet of you to want to fix a nice meal within his dietary guidelines! (some ladies would just take him out to eat and be done with it - lol)
Here is my suggestion:
Grilled or broiled slamon, rice pilaf and a fun combination of sauteed vegetables (seasoned).
For dessert, you could have vegan chocolate cupcakes (recipe found on www.veganpeace.com)
~OR~
You could have a nice tossed salad, crusty bread with a good pesto dipping sauce and some garlic herb shrimp tossed with linguine.
For desserts, you could make a carrot cake or whatever sweet he really fancies. (a good place to look is vegcooking.com)

This has an interesting meal and i also would advise Rachael Ray and remove the cheese!
U could try steamed rice and veggies(corn,broccoli,carrots and peas for example) with an adjusted cheesecake for dessert or easier just take him out!
Ha! He sounds just like how my boyfriend eats!
One thing my boy loves is grilled shrimp. I don't know if yours likes that...
- Mix up 1/2 cup honey, 2 tsp pureed garlic, 2 tsp cracked pepper, a dash of salt, 1/4 cup lemon/lime juice, and 1/4 cup olive oil
- Marinate your shrimp in this for at least an hour, skewer them, and grill them
Alternatively, my boy likes teriyaki salmon.
- Buy 2 fresh salmon fillets (Atlantic or Pacific, not Coho or Pink) and 1 bottle of good-quality teriyaki sauce (I like Lee Kum Kee)
- Soak the fillets for a couple hours in the sauce, then grill for 10 minutes or bake at 400, with the dish uncovered, for 10-20 minutes (check done-ness with a knife inserted in the thickest part of the fish)
On the side, I make garlic-sauteed spinach:
- 8-10 loose cups fresh spinach, washed
- 1 tbsp pureed or minced garlic
- 2 tbsp oil
- Heat the oil in a wok or big fry pan; throw in the garlic and spinach, toss around for 2-5 minutes, testing for done-ness, then remove from heat, drain off any excess moisture, and eat.
My boy also likes to eat it with mushroom quinoa:
- 1 cup rinsed quinoa, 1 cup mushroom broth, 1 cup diced mushrooms (button and dried cremini are nice)
- Simmer 20-odd minutes until the quinoa are soft
Coconut panna cotta is my boyfriend's favourite dessert:
- 2 tsp agar-agar POWDER (it takes more with flakes)
- 1 can of coconut milk
- 1/4 cup sugar
- 1/2 cup soy or dairy milk or cream
Mix coconut milk and soymilk in a pot with sugar. Add agar powder and let sit for 2 minutes. Bring the pot to a low simmer for 5 minutes or until the sugar has dissolved. Pour into ramekins or bowls and let sit in the fridge until set.
Top with berries, or a sauce made by blending 1 cup of defrosted raspberries with 1/4 cup sugar and 1 tbsp lemon juice.
Edit: You can use gelatin instead of agar - if he eats fish derived gelatin, just buy kosher gelatin. You can also use rice rather than quinoa.
